HARD TIMES CREAMED TUNA

Hard Times Creamed Tuna image

Times were tough for my newly divorced mom in the 70's. I remember eating creamed tuna on toast with a green salad on the side at least weekly. It was one of my favorite meals, and I had no idea we were eating it out of necessity. Times aren't so tough now, but I still make this about once a month. It's great when you're in a hurry, or have limited supplies on hand. My kids love it too!

CREAMED TUNA ON TOAST -- WHAT??

Creamed Tuna on Toast -- WHAT?? image

I will admit, there is absolutely nothing about this recipe that made sense to me growing up, other than I really liked it. Mama made it often as a way to stretch a dollar. But, Mama also told us that you shouldn't drink milk with fish. So when I found out she used milk to make this for us, I had some moments of uncertainty ......

CREAMED TUNA IN TOAST CUPS

Creamed Tuna in Toast Cups image

My mother's quick and easy recipe. This recipe uses ingredients you always have on hand in the pantry. It's great when you're in a rush.

Provided by Seasoned Cook

Categories     Tuna

Time 15m

Yield 4-6 serving(s)

Number Of Ingredients 8

2 tablespoons butter
2 tablespoons flour
3/4 cup milk
1 (6 ounce) chunk light tuna
1 teaspoon pimiento, diced
2 tablespoons baby green peas (optional)
6 slices bread
salt

Steps:

  • Over low heat, melt butter in a saucepan and stir in flour. Slowly add milk while stirring. DO NOT bring to a boil. Cook and stir constantly only until slightly thickened.
  • Drain tuna and add to mixture.
  • Lightly stir in salt, pimento and green peas (if used).
  • Push bread slices into greased muffin tins to form a cup. Toast in oven until light brown.
  • While toast is warm, pour creamed tuna mixture into bread cups and serve.

Tips:

  • Use high-quality tuna: Opt for tuna that is packed in olive oil or water and is free of additives.
  • Choose the right bread: Use a sturdy bread that can hold the creamed tuna filling without getting soggy. A good option is a hearty multigrain or sourdough bread.
  • Make sure the creamed tuna mixture is thick enough: The mixture should be thick enough to hold its shape when spooned into the toast cups. If it is too thin, add more flour or cornstarch.
  • Don't overcook the creamed tuna mixture: Overcooking the tuna will make it tough and dry. Cook it just until it is heated through.
  • Garnish the toast cups: Before serving, garnish the toast cups with chopped parsley, chives, or a sprinkle of paprika for an extra touch of flavor.

Conclusion:

Creamed tuna in toast cups is a classic dish that is both delicious and easy to make. It is a great option for a quick and satisfying meal or snack. With its creamy, flavorful filling and crispy bread cups, this dish is sure to please everyone at your table. So, next time you're looking for a tasty and versatile recipe, give creamed tuna in toast cups a try.
