Provided by Food Network Kitchen

Categories     main-dish

Time 50m

Yield 4 servings

Number Of Ingredients 14

1 large bunch rainbow Swiss chard, stemmed and leaves coarsely chopped
1/2 red onion, diced
6 tablespoons 1/3-less-fat cream cheese
1/4 teaspoon freshly grated nutmeg
2 tablespoons chopped toasted pine nuts
1 tablespoon extra-virgin olive oil
1 1/4 pounds flank steak, cut in half
Kosher salt and freshly ground black pepper
1 clove garlic, minced
2 tablespoons red wine vinegar
1 tablespoon unsalted butter
1 tablespoon chopped fresh oregano or 1 teaspoon dried
4 whole wheat dinner rolls
2 cups strawberries, halved

Steps:

  • Combine the chard, onions and 1/2 cup water in a large pot. Bring to a simmer over high heat, then lower the heat to medium. Cover and cook, stirring frequently, until the chard is very tender, about 15 minutes.
  • Meanwhile, combine the cream cheese, nutmeg and 1/4 cup water in a medium saucepan. Place over medium heat and cook, whisking frequently, until the cheese melts and the mixture just bubbles around the edges. With a slotted spoon, add the cooked chard to the cheese mixture (discarding any excess liquid). Mix well and season with 1/4 teaspoon salt and some pepper. Garnish with the pine nuts. Set aside, covered, and keep warm.
  • Heat the oil in a medium skillet over medium heat. Sprinkle the steaks all over with 1/2 teaspoon salt and some pepper. When the oil is hot and shimmering, add the steaks and cook, turning once, until seared and rich mahogany, about 6 minutes per side. Transfer the steaks to a plate.
  • Add the garlic to the pan and cook, stirring occasionally, until aromatic, about 1 minute. Pull the skillet from the heat, add the vinegar, and use a wooden spoon to scrape up any browned bits that cling to the pan. Add in the butter, oregano and any juices from the steak. Stir until the butter melts.
  • Slice the meat against the grain into thin slices. Divide the steak evenly among four plates and pour the pan juices over. Divide the Swiss chard evenly among the four plates and serve each with a dinner roll and 1/2 cup of strawberries.

SWISS CHARD WITH GARLIC

Swiss Chard with Garlic image

This is a very simple recipe for Swiss chard. I like to use the whole vegetable but you need to saute the stems and the leaves separately as the stems take longer. This won't make a lot as the chard will wilt, so if you love chard, think about doubling the recipe.

GARLICKY SWISS CHARD

Garlicky Swiss Chard image

There's really no secret to making excellent sautéed greens: just good olive oil, salt, loads of garlic and a jolt of red pepper flakes. This method works with pretty much any green too - broccoli, broccoli rabe, kale, spinach, collards, brussels sprouts or green beans - so you've really no excuse not to get your daily dose of vegetables. Serve it as a side to any roasted or grilled meat, or over a mound of creamy polenta that's been crowned with a fried egg.

CREAMED SWISS CHARD WITH SHALLOTS AND NUTMEG

Creamed Swiss Chard with Shallots and Nutmeg image

Swiss chard, a member of the beet family, has bumpy, dark-green leaves and white or red stalks and veins. We use green chard with white stems in this recipe since the bright red stems often bleed their color.

Time 20m

Number Of Ingredients 9

2 tablespoons extra-virgin olive oil
1 small onion, finely diced (about 1 cup)
2 cloves garlic, minced
2 tablespoons grated peeled fresh ginger
1 small dried hot red chile, such as chile de arbol, stemmed and crumbled
2 pounds Swiss chard (3 to 4 bunches), stems removed, torn into 2-inch pieces (about 12 packed cups)
1/2 cup light coconut milk
2 tablespoons water
Coarse salt

Steps:

  • Heat oil in a large pot over medium heat. Add onion, garlic, ginger, and chile and cook until tender and fragrant, 6 to 8 minutes. Add chard leaves, coconut milk, and water. Cover and cook, stirring occasionally, until chard is tender, 4 to 5 minutes. Season with salt.

Tips:

  • Choose fresh Swiss chard: Look for leaves that are dark green and crisp, with no signs of wilting or yellowing.
  • Wash the Swiss chard thoroughly: Rinse the leaves under cold running water to remove any dirt or grit.
  • Remove the tough stems: Cut off the tough stems from the leaves, leaving only the tender leaves.
  • Chop the Swiss chard finely: Chop the leaves into small pieces to ensure they cook evenly.
  • Use a large skillet: A large skillet will provide ample space for the Swiss chard to cook without overcrowding.
  • Cook the Swiss chard over medium heat: Medium heat will help to prevent the Swiss chard from becoming overcooked and mushy.
  • Stir the Swiss chard frequently: Stirring the Swiss chard frequently will help to ensure that it cooks evenly.
  • Season the Swiss chard to taste: Add salt, pepper, nutmeg, and any other desired seasonings to taste.
  • Serve the Swiss chard immediately: Creamed Swiss chard is best served immediately after cooking, while it is still hot and flavorful.
