2 (7 1/2-ounce) packages John Cope's dried sweet corn (about 4 cups)
5 cups whole milk
2 cups heavy cream
4 tablespoons unsalted butter
1/2 cup finely chopped onion (about 1/2 small onion)
1 tablespoon kosher salt, plus more
1 tablespoon sugar
Freshly ground black pepper
Sliced chives (for serving)

Steps:

  • Stir corn, milk, and cream in a large bowl. Cover with plastic wrap and chill at least 4 hours or up to overnight.
  • Melt butter in a large pot over medium heat. Add onion and a pinch of salt and cook, stirring often, until onion is translucent and just starting to turn golden, about 6 minutes. Add corn mixture, sugar, and 1 Tbsp. salt. Increase heat to medium-high and cook, stirring frequently, until mixture comes to a boil. 5 bacon strips, chopped
1 large sweet onion, chopped
1 medium sweet red pepper, chopped
5 cups frozen corn (about 24 ounces), thawed
2 cups cubed fully cooked ham
1/2 cup half-and-half cream
1 tablespoon brown sugar
1 tablespoon dried parsley flakes
1 teaspoon smoked paprika
1/2 teaspoon salt
1/2 teaspoon pepper
1 package (8 ounces) cream cheese, cubed and softened

Steps:

  • In a large skillet, cook bacon over medium heat until crisp, stirring occasionally. Remove with a slotted spoon, leaving drippings in pan; drain on paper towels., Cook and stir onion and sweet red pepper in bacon drippings over medium-high heat until tender, 5-6 minutes., In a greased 4-qt. slow cooker, combine corn, ham, cream, brown sugar, parsley, paprika, salt, pepper, bacon and onion mixture. 2 tablespoons all-purpose flour
1 tablespoon sugar
1 1/2 teaspoons coarse salt
1/2 teaspoon ground ginger
1/4 teaspoon freshly ground white pepper
1 tablespoon unsalted butter
1 small onion, cut into 1/4-inch dice
4 cups fresh corn kernels (about 8 ears)
1 1/2 cups heavy cream

Steps:

  • Stir together flour, sugar, salt, ginger, and white pepper in a small bowl.
  • Melt butter in a large saucepan over medium heat; add onion, and cook, stirring occasionally, until tender, 4 to 5 minutes (do not brown). 1/4 c diced onions
1 Tbsp butter
4 c frozen sweet corn
4 slice fully cooked bacon, crumbled
1 c heavy cream
1/2 c chicken broth
1 Tbsp all purpose flour
1/4 tsp pepper
1/4 c grated parmesan cheese
2 Tbsp minced fresh parsleuy

Steps:

  • 1. Saute onion in butter for 2 to 3 minutes. Add corn and bacon. Cook an additional 2 to 3 minutes.
  • 2. Stir together cream, broth and flour.
  • 3. Pour cream mixture into corn and bring to a boil. Simmer on low 10-12 minutes until sauce thickens.
  • 4. Stir in pepper, Parmesan cheese and parsley before serving.
