2 cups frozen green peas
2 tablespoons butter
1 cup sliced fresh mushrooms
1 small chopped onion
1 tablespoon all-purpose flour
1 cup light cream
¼ teaspoon salt
¼ teaspoon ground black pepper
1 pinch ground nutmeg

Steps:

  • Fill a small saucepan with one inch of water. Bring to a boil, add peas, and cook until tender, about 5 minutes. Drain and set aside.
  • Melt butter in a medium saucepan over medium heat. Add mushrooms and onions, and cook for a few minutes, or until tender. 3 c frozen peas, cooked
1/4 c chopped parsley
WHITE SAUCE:
3 Tbsp butter
3 Tbsp flour
1 c milk or cream
1/2 tsp salt
1 pinch pepper
SAUTÉED MUSHROOMS:
1 1/2 c mushrooms, fresh button,diced
3 Tbsp butter
1/4 tsp salt
1 Tbsp worcestershire sauce

Steps:

  • 1. White sauce: Melt butter, stir in flour, add milk gradually and cook slowly until thickened. Add salt and pepper.
  • 2. Sautéed Mushrooms: Cut off all but 1/2 inch of mushroom stems. Wash mushrooms throughly, dice and sauté, in butter 10 to 15 minutes, Season with salt and pepper;stir in Worcestershire sauce.
  • 3. Add mushrooms, parsley if desired and peas to the white sauce. Stir together and serve hot.

1/2 pound fresh mushrooms
1 tablespoon butter
2 tablespoons finely chopped shallots
Salt to taste if desired

1/2 cup heavy cream
