CREAMED CHEDDAR LEEKS

Creamed Cheddar Leeks image

This is a James Martin recipe that he used on his Christmas shows. I also use this recipe for part of our Christmas lunch, (or our Sunday roast) as it can be prepared well in advance and then finished in the oven just before serving. Leeks, cream and cheese are a match made in heaven and this is no exception. I hope you enjoy it.

ROASTED SALMON WITH CREAMED LEEKS

Roasted Salmon with Creamed Leeks image

Provided by Tyler Florence

Categories     main-dish

Time 3h10m

Yield 6 servings

Number Of Ingredients 17

1 veal knuckle
1 teaspoon tomato paste
1 pound rutabaga, peeled and quartered
2 carrots, roughly chopped
2 stalks celery, roughly chopped
1 large onion, roughly chopped
6 sprigs fresh thyme
1 bottle decent red wine
Sea salt and freshly ground black pepper
1 /4 cup unsalted butter
3/4 cup extra virgin olive oil
4 leeks, trimmed, and sliced into 1/4-inch circles
3/4 cup heavy cream
1 whole fillet of salmon, about 3 1/2 pounds, scaled, with the skin attached and pin bones removed
2 shallots, minced
1/2 pound fresh porcini mushrooms, cleaned and sliced
1/2 pound fresh chanterelle mushrooms, cleaned and sliced

Steps:

  • Preheat the oven to 425 degrees F.
  • Place the veal and tomato paste into a deep, oven-proof stock pot. Drizzle with 1/4 cup of olive oil and season with salt and pepper. Place in the oven to roast for 30 minutes. Add the rutabaga, carrots, celery, onion, and 3 sprigs of the thyme to the pan. Continue to roast for 20 minutes. Remove from the oven and place over a medium flame. Pour in the wine and enough water to cover by 3 inches. Let simmer for 1 1/2 hours, skim any impurities that rise to the surface.
  • When reduced by half, remove and strain through a fine sieve. Discard the solids and keep the sauce warm. Season with salt and freshly ground pepper to taste.
  • Meanwhile, heat the butter and 1/4 cup of the olive oil together in a large saute pan over a low flame. Add the leeks and 2 sprigs thyme to the pan and let soften for 5 minutes. Add the cream to the leeks and continue to cook until thick, about 10 more minutes. Stir occasionally. Season with salt and pepper and set aside to cool.
  • Use a sharp knife to split the fish open like a book, making a slice in the salmon fillet lengthwise from collar to tail about halfway between the skin and the bottom, being careful not to slice completely through the opposite side. Open the salmon like a book with the skin side down on the cutting board. Season the inside and outside of the fish with sea salt and freshly ground black pepper and begin stuffing the salmon. Spread the leek mixture evenly over the fish. Then begin rolling the flesh side in towards the skin side like a jellyroll. The salmon should roll up until the skin covers the outside of the fish again. Secure with kitchen string in several places and coat the skin with extra virgin olive oil.
  • Drizzle the remaining olive oil into a large roasting pan and heat over a medium-high flame. Place the salmon in the pan and sear the skin until crispy on all sides, rolling several times in the pan. Carefully place the roasting pan in the oven and roast for five minutes. Slice into 2-inch pinwheels.
  • While the fish is roasting, start the mushrooms. Pour the remaining olive oil into a large saute pan over a medium flame. Add the shallots, remaining sprig of thyme, and mushrooms. Let the mushrooms cook for 10 minutes, until they release their moisture. Stir often and let the moisture evaporate. Add 3/4 cup of the sauce. Let simmer until the mushrooms absorb the sauce and then season with salt and pepper. Serve the mushrooms with a pinwheel of salmon and additional sauce.

Yield Makes 4 servings

Number Of Ingredients 8

3 1/2 lb leeks, root ends trimmed
2 cups coarse fresh bread crumbs (from a country loaf, crusts discarded)
3/4 teaspoon salt
3/8 teaspoon black pepper
3/4 stick (6 tablespoons) unsalted butter
1 cup heavy cream
Special Equipment
1 1/2-qt gratin or other shallow baking dish (10 by 8 inches)

Steps:

  • Put oven rack in middle position and preheat oven to 450°F.
  • Cut each leek into an 8-inch length, measuring from root end, and halve lengthwise, then cut crosswise into roughly 1 1/2-inch pieces. (You should have about 8 cups.) Wash leek pieces in a large bowl of cold water, agitating them, then lift out and transfer to another bowl. Repeat with clean water, then drain leeks well.
  • Cook bread crumbs with 1/4 teaspoon salt and 3/4 teaspoon pepper in 3 tablespoons butter in a 10-inch heavy skillet over moderate heat, stirring, until crisp and pale golden, 3 to 4 minutes. Remove from heat.
  • Cut out a round from parchment or wax paper to fit just inside a 12-inch heavy skillet.
  • Cook leeks with remaining 1/2 teaspoon salt and 1/4 teaspoon pepper in remaining 3 tablespoons butter in a 12-inch heavy skillet over moderately low heat, leeks covered directly with parchment, stirring occasionally, until tender, about 12 minutes.
  • Discard parchment and transfer leeks with a slotted spoon to gratin dish. Pour cream slowly over leeks, then scatter bread crumbs on top. Bake until cream is bubbling and slightly thickened and crumbs are golden brown, about 15 minutes.

SEARED FISH WITH CREAMED KALE AND LEEKS

Seared Fish With Creamed Kale and Leeks image

This satisfying weeknight meal involves three simple components - fish, kale and rice - and builds flavor from just one versatile element requiring a little labor: leek-infused cream. Sauté leeks, garlic and thyme in butter until softened, then simmer with heavy cream until thickened. Strain the mixture, saving the leeks to add flavor to cooked rice, polenta or pearl couscous, then combine the fragrant cream with blanched kale and a little mustard. Season the skin of your fillets early to help them develop a particularly crisp, crackly crust. If you can't find fresh char, any mild fish fillets will work well in their place.

Provided by Alexa Weibel

Categories     dinner, seafood, main course

Time 30m

Yield 4 servings

Number Of Ingredients 12

4 (5- to 6-ounce) Arctic char or other mild fish fillets, such as salmon
Kosher salt and black pepper
1 1/2 pounds curly kale
3 tablespoons unsalted butter
1 large leek (about 1/2 pound), trimmed, white and pale greens quartered lengthwise then thinly sliced
6 large fresh thyme sprigs
3 garlic cloves, minced
1 cup heavy cream
1 1/2 teaspoons Dijon mustard
1 teaspoon chicken or vegetable stock concentrate, like Better Than Bouillion
Cooked white rice or pearl couscous, warmed, for serving
2 tablespoons olive oil

Steps:

  • Prepare your fish: Pat the fish dry, then salt the skin side to help draw out moisture. Set on a plate and refrigerate, uncovered.
  • Bring a large pot of salted water to a boil over high. Prepare your kale: Pull the leaves off the stems and tear leaves into bite-size pieces. Wash vigorously, drain, then set aside.
  • In a medium saucepan, melt the butter over medium. Add the leek, thyme and garlic, season with salt and pepper, and cook, stirring frequently, until soft, about 7 minutes.
  • Stir in the cream and bring to a boil over high. Continue to cook on high until thickened, about 5 minutes. Using a fine-mesh sieve set over a liquid measuring cup or small bowl, strain the sauce, pressing to extract as much liquid as possible. (You should have about 1/2 cup sauce.) Set aside the solids and return the sauce to the saucepan. Whisk in the mustard and stock concentrate, and season with salt and pepper. Cover and set aside.
  • Discard the thyme sprigs and stir the cooked leek mixture into cooked rice, if desired. Season to taste with salt and pepper.
  • Once the sauce is done, blanch the kale in the boiling water until just wilted, about 2 minutes. Transfer to a colander to drain and rinse under cold water. Once cool enough to handle, squeeze out the excess liquid. Add to the strained cream, then season with salt and pepper. Cover, and warm over low, stirring occasionally.
  • Cook the fish: Heat the oil in a large nonstick skillet over medium-high. Pat the fish dry a second time, then season the skin with pepper, and the flesh with salt and pepper. Add to the hot oil, skin-side down, and cook until the skin is crispy and golden, about 3 to 4 minutes. Carefully flip the fish and cook until the outside starts to turn golden, but the thickest part of the fish is still slightly translucent, about 3 minutes.
  • Divide the rice (if using), creamed kale and fish among plates and serve immediately.

CREAMED LEEKS

Creamed Leeks image

A creamy flavoursome side-dish which allows leeks and onions to really star, but which also includes thyme, nutmeg and black pepper, wine and several different cheeses. I've included feta here as it blends so well with onions and other vegetables in pies and strudels, but if you are not fond of feta, by all means substitute it with something else such as goat's cheese or cream cheese or ricotta. Equally you could use Greek yoghurt instead of the double cream. I love the crunch of nuts in a dish like this, but if that does not appeal, and of course if some of those who'll be eating your dish have nut allergies, leave them out. Like all my recipes, this is an invitation to do with it what you will so that it meets your taste preferences.

Time 55m

Yield 8 serving(s)

Number Of Ingredients 15

40 g unsalted butter
6 leeks, white and pale green parts only, thoroughly washed, halved and finely sliced
6 onions, chopped
4 garlic cloves, finely chopped
2 tablespoons fresh thyme leaves
1 teaspoon brown sugar
150 ml white wine
10 tablespoons double cream
fresh ground black pepper, to taste
1 cup feta cheese, crumbled
1 cup havarti cheese or 1 cup swiss cheese, grated
1/2 cup parmesan cheese, grated
1/4 teaspoon nutmeg
1 1/2 tablespoons almonds or 1 1/2 tablespoons walnuts, coarsely chopped
fresh chives, to garnish

Steps:

  • Melt the butter in a pan over a medium heat and gently sauté the leeks, onions, garlic and thyme for 5-10 minutes or until they have softened. In the last few minutes, add the teaspoon of brown sugar. Pour in the white wine and leave the pan over the heat for a further 5 minutes.
  • Add the double cream, season to taste with the black pepper; and simmer gently for 5-6 minutes.
  • Transfer the leeks and onions to an ovenproof dish and leave to cool.
  • Preheat the oven to 180°C/355°F/gas 4.
  • In a small bowl, combine the cheeses, nutmeg and nuts. If the leeks and onions mixture seems too thick, to be having the cheeses and nuts added to it, add a little more wine, a tiny bit at a time; then add the cheese and nuts mixture to the ovenproof dish containing the leeks and onions; and bake it in the oven for 20-30 minutes. The cheeses and nuts can serve as a topping for the leeks and onions or you can mix the cheeses into the leeks and onions mixture. Go with your preference.
  • Serve hot, garnished with fresh chives.

SALMON OVER CREAMED LEEKS WITH APPLE BUTTER SAUCE

Salmon over Creamed Leeks with Apple Butter Sauce image

Provided by Robert Irvine : Food Network

Categories     main-dish

Time 1h20m

Yield 6 servings

Number Of Ingredients 42

1/2 cup (1 stick) butter
2 apples (your choice of variety), peeled, cored and diced small
2 cups apple juice
1/2 cup orange juice
1 tablespoon rice wine vinegar
2 tablespoons cornstarch
1/4 cup water
1/2 cup (1 stick) butter
2 apples (your choice of variety), peeled, cored and diced small
2 cups apple juice
1/2 cup orange juice
1 tablespoon rice wine vinegar
2 tablespoons cornstarch
1/4 cup water
2 tablespoons olive oil
2 tablespoons butter
2 onions, chopped
1 cup white wine
6 leeks, white and tender green parts only, cut into 12 pieces lengthwise and thoroughly soaked in salt water to release grit
1/2 cup heavy cream
Salt
Freshly ground black pepper
2 tablespoons olive oil
2 tablespoons butter
2 onions, chopped
1 cup white wine
6 leeks, white and tender green parts only, cut into 12 pieces lengthwise and thoroughly soaked in salt water to release grit
1/2 cup heavy cream
Salt
Freshly ground black pepper
6 (8-ounce) salmon fillets
Coarse sea salt
Freshly ground pepper
Cayenne pepper, to taste
2 to 3 tablespoons oil
1/4 pound vermicelli, deep-fried or 2 tablespoons chopped lemon thyme, for garnish
6 (8-ounce) salmon fillets
Coarse sea salt
Freshly ground pepper
Cayenne pepper, to taste
2 to 3 tablespoons oil
1/4 pound vermicelli, deep-fried or 2 tablespoons chopped lemon thyme, for garnish

Steps:

  • For the apple butter sauce: Melt butter in a saute pan and add apples, cooking over medium heat for a few minutes until they begin to soften. Add apple juice, orange juice and rice wine vinegar, cover and allow the apples to cook until very soft. Then uncover and allow liquid to reduce to about 1/3 of what you started with. Puree in a blender or food processor. Create a slurry by gradually whisking cornstarch into about 1/4 cup water and blend the slurry into the sauce. Return the sauce to the pot and allow to cook for a few minutes to thicken. Season with salt, if needed.
  • Begin the creamed leeks while the apples are cooking.
  • Heat the olive oil and butter in a medium saute pan over medium heat and saute onion until translucent. Deglaze the pan with wine and reduce until the liquid is almost all gone. (While you are waiting for the wine to reduce, start cooking the leeks.) Cook the leeks in simmering water until tender. Drain and set aside. When the wine has mostly evaporated, stir in the cream, season with salt and pepper, and lower heat to a simmer to allow to reduce and thicken. Strain this sauce and pour over the leeks and set aside briefly in a warm place.
  • For the fish: Season the salmon fillets with coarse sea salt and both peppers. Place a little oil into the saute pan and bring to smoking point (you need a hot pan in order to get a crispy outside). Cook the salmon, skin side down leaving undisturbed (no peeking) for about 5 minutes, or until the skin begins to get crispy, then turn and begin cooking for 4 minutes more. This allows the surface of the fish to "caramelize." (You may need more time on the salmon depending on the thickness). You can, if you wish, finish the salmon in a preheated 350 degree F oven. However, DO NOT OVERCOOK THE SALMON. Once you touch the flesh and it springs back up, it's cooked. Remember, because of carryover cooking, the fish will continue to cook after it is removed from the oven.
  • Reheat the apple butter sauce if necessary. Place 4 lengths of the creamed leeks on one side the serving plate, with a salmon fillet on the other. Spoon apple butter sauce on the fish and garnish with lemon thyme.

Yield Serves 8

Number Of Ingredients 10

3 pounds leeks
3 large onions, sliced (about 6 cups)
3 tablespoons vegetable oil
2 large garlic cloves, minced
1 tablespoon all-purpose flour
1 1/2 cups chicken broth
1 tablespoon fresh lemon juice
4 russet (baking) potatoes (about 2 pounds)
2 tablespoons unsalted butter, melted
paprika to taste

Steps:

  • Trim leeks, discarding dark green part, and halve lengthwise. Cut leeks crosswise into 1/2-inch-thick slices and in a large bowl of cold water wash well. Drain leeks.
  • In a 12-inch heavy ovenproof skillet cook leeks and onions in oil over moderate heat, stirring, until softened, about 15 minutes. Add garlic and cook, stirring, 1 minute. Add flour and cook, stirring, 3 minutes. Add broth in a stream, stirring, and simmer, stirring, until thickened, about 3 minutes. Stir in lemon juice and salt and pepper to taste and remove skillet from heat.
  • Preheat oven to 400°F.
  • Peel potatoes and halve lengthwise. Arrange each potato flat side down and make crosswise slices about 1/4 inch apart, cutting down to about 1/4 inch from flat side but not all the way through (a metal skewer inserted lengthwise about 1/4 inch from flat side will prevent slicing all the way through). Remove skewer if using.
  • Arrange potato halves, flat sides down, in leek mixture and bring mixture to a simmer. Brush potatoes with butter and sprinkle with paprika and salt and pepper to taste. Bake mixture in lower third of oven 1 hour and 15 minutes, or until potatoes are tender within and crisp and golden on top.

Place leeks on hot griddle and cook, flipping occasionally, until slightly charred, about 7 minutes. Remove leeks from heat and let cool. Cut cooled leeks into 1-inch lengths, discarding roots. Heat 1 tablespoon oil in a medium saucepan over medium heat. Once hot, add scallions and garlic, and cook until tender, 3-5 minutes. Stir in cream and leeks until combined. Reduce heat to medium-low and simmer until leeks are tender, cream has reduced by ⅔ and consistency is similar to creamed spinach, 30-35 minutes. Stir in herbs and season with salt and pepper. Turn heat off and leave pan on stove, covered, to keep warm. Make Filo Feta Parcels: Lay thawed filo dough sheets in a stack on a dry work surface. Remove one sheet of dough and lay flat on surface. Cover remaining stack of filo dough with a layer of plastic wrap, then a damp towel. Working quickly, brush sheet of filo with melted better, then fold in half crosswise from bottom to top. Brush top layer again with melted better. Place 1 feta square at left end of filo, about 2 inches from edge of dough. Sprinkle feta with thyme leaves, if using. Fold left short end of filo over feta, then fold two long edges over top of feta. Roll filo-feta packet from left to right to form a neat parcel. Brush surface with melted butter. Repeat with remaining filo and feta. Heat oil in a large nonstick pan over medium heat. Once hot, fry feta-filo parcels until just golden, 2-3 minutes per side. To serve, place parcels on top of creamed leaks, drizzle with honey and sprinkle with sesame seeds. Serve immediately with a glass of ouzo!

Tips:

  • Select the right leeks: Choose fresh, young leeks with a long white base and dark green leaves. Avoid leeks that are thick and woody, as they will be tough and less flavorful.
  • Trim the leeks properly: Cut off the root end and the dark green leaves, leaving only the white and light green parts. Slice the leeks lengthwise and rinse them thoroughly to remove any dirt or grit.
  • Use a heavy-bottomed pot or Dutch oven: This will help to distribute the heat evenly and prevent the leeks from burning.
  • Cook the leeks slowly over low heat: This will allow them to soften and caramelize without browning. Stir the leeks occasionally to ensure that they cook evenly.
  • Use a flavorful cooking liquid: Chicken broth, vegetable broth, or white wine are all good options. You can also add herbs, spices, or other vegetables to the cooking liquid for extra flavor.
  • Don't overcook the leeks: They should be tender but still slightly firm. Overcooked leeks will become mushy and lose their flavor.
  • Serve the creamed leeks immediately: They are best enjoyed hot and fresh. You can garnish them with chopped parsley, chives, or grated Parmesan cheese.

Conclusion:

Creamed leeks are a delicious and versatile side dish that can be served with a variety of main courses. They are also a great way to use up leftover leeks. With their simple ingredients and easy preparation, creamed leeks are a perfect dish for busy weeknights or special occasions alike.
