Traditional creamed corn gets its luscious richness not from cream or milk, but from the milky juice of the corn kernels and cob. Here, frozen corn steps in during the off-season and holiday months. It's simmered until tender, partially pureed and then thickened with a slurry of flour and water. CREAMED CORN MY WAY

Creamed Corn My Way image

I grew up eating canned cream corn. Never really liked it, other than the sweetness. Decided to try and make it the way I would like it. Turned out yummy! *** wanted to add green chiles but it would not have gone well with the meal we were having. Next time!

Time 35m

Number Of Ingredients 7

2 c frozen sweet corn
2 oz cream cheese
1/4 c milk
1/2 tsp garlic powder
1/4 tsp black pepper
2 Tbsp minced onion
2 Tbsp butter

Steps:

  • 1. Melt butter over medium high heat.
  • 2. Add minced onion, and saute until softened.
  • 3. Add small cubed cream cheese, stir until melted. Reduce heat to low.
  • 4. Add seasonings, stir well to combine.
  • 5. Let cook on low until done to your liking.

Tips

  • To enhance the dish's flavor, use fresh corn kernels. If fresh corn is unavailable, frozen or canned corn can be used as a substitute.
  • To add a smoky flavor, roast the corn kernels in a hot oven before adding them to the cream sauce.
  • For a creamier texture, use heavy cream or half-and-half instead of milk.
  • Season the cream sauce to taste with salt, pepper, and other desired spices. Popular additions include garlic powder, onion powder, and paprika.
  • To prevent the cream sauce from curdling, temper the eggs before adding them to the hot sauce. This can be done by slowly whisking a small amount of the hot sauce into the eggs until they are well combined.
  • Serve creamed corn as a side dish with grilled or roasted meats, poultry, or fish. It can also be used as a topping for baked potatoes, cornbread, or waffles.

Conclusion

Creamed corn is a classic comfort food that can be enjoyed by people of all ages. It is a versatile dish that can be served as a side dish, a topping, or even a main course. With a few simple ingredients and a little bit of time, you can easily make delicious creamed corn at home. So next time you are looking for a comforting and satisfying dish, give creamed corn a try.
