Creamed Chipped Beef, also known as SOS, consists of thinly sliced beef in a velvety creamy gravy. This easy recipe is the BEST!

4 tablespoons unsalted butter (, divided)
4 tablespoons flour
2 1/2 cups whole milk or half & half
8 ounce jar dried beef
Dash Worcestershire sauce
1 teaspoon Dijon mustard
¼- ½ teaspoon seasoned salt (, optional)
Freshly ground black pepper
Thick cut toast
4 baked potatoes (, inside scooped out)
½ cheddar cheese (, shredded)

Steps:

  • Drain and rinse dried beef. Soak in cold water for 10 minutes, drain and rinse again.
  • Melt 2 tablespoons unsalted butter in a large skillet over medium heat. Add drained and rinsed beef, tearing into smaller pieces as you add it.
  • Sauté for 3-4 minutes until browned.
  • Remove to a plate, set aside.
  • Add remaining 2 tablespoons of butter, melting and adding flour. Whisk to make a roux. Allow to lightly brown, approximately 4-5 minutes.
  • Whisk in whole milk, whisking until all lumps are dissolved and mixture starts to thicken. Season with a dash of Worcestershire sauce and Dijon mustard.
  • Add browned beef back to the cream sauce, covering and heating for 1-2 minutes.
  • Taste test the cream sauce and if needed, add a small amount of seasoned salt. Depending on how well you drained and rinsed the beef and your salt preferences this may or may not be needed.
  • Serve beef and cream sauce over thick cut toast and top with freshly ground black pepper and chopped parsley.

1 jar Hormel Dried Beef, (4.5oz)
4 Tablespoons Butter
1/3 cup All Purpose Flour
3 cups Whole Milk, at room temperature
½ teaspoon Worcestershire Sauce (optional)
½ teaspoon Black Pepper

Steps:

  • Cut the dried beef into thin strips.
  • Place strips in a small bowl and cover with warm water.
  • Soak the strips for 30 minutes, drain, discard the water.
  • Place a skillet over Medium heat on your stove top.
  • Add butter, let melt.
  • Add the flour, stirring it in quickly until combined with butter.
  • Add the milk, stirring quickly until fully combined and it starts to thicken.
  • Add the Worcestershire sauce if desired.
  • Add the black pepper.
  • Add the strips of dried beef, stir until fully coated.
  • Let simmer for about 2 minutes.

3 tablespoons unsalted butter, plus more if needed
Two 8-ounce top sirloin steaks
Kosher salt and freshly ground black pepper
1 1/2 cups sliced cremini mushrooms
1/2 cup diced yellow onion
3 cloves garlic, chopped
2 tablespoons all-purpose flour
1 teaspoon English mustard, such as Coleman's
1 cup milk
2/3 cup chicken broth
1/2 cup stout beer or Madeira wine
1 tablespoon Worcestershire sauce
2 tablespoons chopped fresh parsley, plus more for garnish
4 slices thick-cut country bread

Steps:

  • Heat the butter in a medium skillet set over medium-high heat. Sprinkle the steaks with salt and pepper and sear on both sides, about 2 minutes per side for medium rare. Set aside to rest for 5 to 10 minutes.
  • Heat the same skillet over medium heat and add more butter if needed. Add the mushrooms, onions and garlic and cook until the onions are translucent and the mushrooms "weep," or release water, about 5 minutes. 1 (10 3/4 ounce) can cream of mushroom soup (reduced sodium works great)

toasted bread (Rye is great but white is traditional)

  • You may want to rinse the beef in cold water to reduce saltiness and dry in a paper towel.
