10 cups puffed wheat cereal
1 cup corn syrup
1 cup white sugar
½ cup butter
6 tablespoons unsweetened cocoa powder
¼ cup brown sugar
1 teaspoon vanilla extract

Steps:

  • Grease a 9x13-inch pan. Place puffed wheat in a large heat-proof bowl; set aside.
  • Bring corn syrup, white sugar, butter, cocoa powder, and brown sugar to a boil in a heavy saucepan. Remove cocoa mixture from heat; stir in vanilla extract. Pour cocoa mixture over puffed wheat cereal; stir until well combined.
  • Press puffed wheat mixture into prepared pan. Allow to cool completely before cutting into bars.

  • 1. Fill a small pot with cool water, add in the salt, and place over high heat. 2. After 3 minutes, reduce to medium heat.3. Slowly pour the cream of wheat into the pot while vigorously stirring it with a silicone whisk.*This prevents the formation of lumps*4. Stir in the milk, butter, and sugar, then let it cook for 2 more minutes while continuing to stir.

It was her family favorite and now a dainty that we love .A very tasty,simple square that only takes minutes to put together.,not a lot of prep time required. We love it plain although many variations can be made such as sprinkling the top with nuts,adding cherries or topping with strawberries or sauce. The list is endless. Everyone will be wondering what the filling is. Enjoy!

2 cups milk
1/2 cup cream of wheat (hot cereral)
3/4 cup butter, softened (or margarine)
3/4 cup sugar
1 teaspoon vanilla
graham wafers, about 50 single enough to cover the pan in 3 layers
cream cheese frosting, using your favorite recipe see note in directions

Steps:

  • Stir the Cream of Wheat into the milk . This mixture can be cooked in the microwave on medium for 4 minutes until thickened,stirring every minute, or cook in a saucepan on top of the stove on medium heat,but stir continually to prevent lumps or sticking to the bottom of the pan until thickened. It will thicken once it comes to a slow boil.Mixture will thicken more as it cools.
  • Allow the mixture to cool.
  • Beat together margerine, sugar and vanilla.
  • Add to the cooled mixture and beat until well blended.
  • In a 9X13 pan,arrange a layer of graham wafers.
  • Top with a layer of half of the cream of wheat mixture.
  • Top with a second layer of Graham Wafers.
  • Add the rest of the Cream of wheat mixture.
  • Top with a third layer of Graham Wafers.
  • Top this layer of Graham wafers with Cream cheese icing .using your favorite recipe but I recommend halving a recipe which would use only 4 ounces of cream cheese rather than 8 ounces so the icing is not to thick on top of the square. Store in fridge.
  • Best when prepared a day ahead of serving,allowing the Graham wafers to soften.
  • Note: servings depends on Square size.
  • .Hot mixture can be cooled by placing in freezer stirring every few minutes. Cooking time is cooling time.
  • Note: these squares can be frozen BUT the Graham crackers will be really quite soft. They can still be sliced without a problem.

FRIED CREAM OF WHEAT A K A THE FARINA PROJECT

The fried farina was usually served with bacon and eggs. Nice, huh? Recipe requires 1 day or overnight advance preparation.

3/4 cup farina (Cream of Wheat)
4 1/4 cups water (read *Note)
1/2 teaspoon salt (optional)
farina meal, for dredging
butter
warm maple syrup

Steps:

  • *Note: the directions on the back of the Cream of Wheat box indicate you can substitute milk for all (or part of) the water. I've prepared the recipe using water only and with water/milk especially if there is milk on hand that is close to the pull date.
  • In a pan, bring water (and salt if using) to the boil (or almost to the boil if using milk) and stir in 3/4 cup Cream of Wheat. Stir with fork or wire whisk to break up any lumps.
  • Lower heat and simmer uncovered for 10 minutes, stirring every minute or so. Note: Cooking time may vary depending on which type of Cream of Wheat is used.
  • While still hot, pour the cooked cereal into a 9x11-inch buttered casserole dish.
  • Let cool, cover, then place in refrigerator overnight.
  • Next day, cut the farina up into 16-20 slices. (Another method is to carefully invert the casserole dish over the skillet. The farina will slip out of the casserole dish easily. This is trickier to do though. I find Option A much easier.).
  • Place farina meal in a shallow plate or on a piece of wax paper.
  • Lightly dredge each slice in farina meal.
  • In a large skillet, melt 2 tablespoons butter on medium heat.
  • Add some of the farina slices to the skillet but do not crowd.
  • Fry on both sides until golden brown and crispy.
  • Cook the slices in batches, adding more butter as needed.
  • Arrange on platter and serve with butter and warm maple syrup.
