1 pound medium fresh mushrooms, halved
1 pound sliced baby portobello mushrooms
1/2 pound sliced fresh shiitake mushrooms
7 tablespoons butter
12 garlic cloves, minced
2 green onions, chopped
1/2 cup all-purpose flour
2 cans (14-1/2 ounces each) chicken broth
3-1/3 cups whole milk
1-2/3 cups heavy whipping cream
2 tablespoons sherry
4 teaspoons minced fresh thyme or 1-1/2 teaspoons dried thyme
2 teaspoons minced fresh basil or 3/4 teaspoon dried basil
1 teaspoon salt
1 teaspoon pepper
3 sheets frozen puff pastry, thawed
1 egg, beaten
1 teaspoon water

Steps:

  • In a Dutch oven, saute mushrooms in butter in batches until tender. Return all to the pan; add garlic and onions. Cook and stir for 2 minutes. 2 tablespoons butter
2 onions, chopped
1 1/2 lbs portabella mushrooms
salt and pepper
3 cups chicken broth
1 cup heavy cream
2 -3 tablespoons dry sherry or 2 -3 tablespoons orange juice
1/4 cup thinly sliced fresh chives
1 (17 1/4 ounce) package frozen puff pastry, thawed
1 large egg, beaten

Steps:

  • Quarter and thinly slice the mushrooms.
  • Heat butter in a saute pan over medium high heat and add mushrooms and onions, season with salt and pepper and cook stirring occasionally till softened and the mushroom liquid has evaporated.
  • Add broth and cream and simmer 15 minutes.
  • In a blender puree half of the mixture, it is hot so be careful when blending.
  • Stir puree and sherry or juice into the soup remaining in the pan.
  • Heat soup till hot, season with salt and pepper and set aside to cool.

3 tablespoons dry sherry or madeira wine (optional)
2 cups low-sodium chicken broth
1 cup half-and-half
Crusty bread, for serving (optional)

Steps:

  • Melt 2 tablespoons butter in a pot over medium-high heat and cook until lightly browned. Add the ham and cook until slightly browned, about 3 minutes. 1 egg
1 tablespoon milk
8 cups chicken stock
6 tablespoons unsalted butter
3 tablespoons olive oil
3 shallots, minced
3 tablespoons all-purpose flour
1 1/2 lbs fresh mixed mushrooms, coarsely chopped (cremini, porcini, portobellos and chanterelles)
1/4 teaspoon salt
1/8 teaspoon white pepper
1/3 cup dry marsala or 1/3 cup brandy
1 cup cream (half and half)
2 tablespoons fresh chives, minced

Steps:

  • Preheat oven to 400 degrees.
  • Line two baking sheets with parchment paper.
  • Roll out a sheet of puff pastry on a lightly floured surface to a thickness of about 1/8 of an inch.
