1 bunch fresh cilantro, leaves only (about 4 cups leaves, loosely packed)
2 quarts chicken stock
4 tablespoons butter
1 1/2 cups finely chopped onions
4 garlic cloves, finely chopped
6 tablespoons flour
salt
1 cup heavy cream (do not use sour cream) or 1 cup Mexican crema (do not use sour cream)
shredded chihuahua cheese, manchego cheese, jack cheese (to garnish) or gouda cheese (to garnish)

Steps:

  • Place cilantro leaves in a blender with 1 cup of the chicken stock and blend to form a puree. Set aside.

2 bunches fresh cilantro, take 1 bunch and wash,stems removed and leaves chopped (Remove 6 T. from the other bunch to set aside for garnish)
1 (32 ounce) can low-sodium low-fat chicken broth or 1 (32 ounce) can low-sodium low-fat vegetable broth
2 teaspoons butter
2 teaspoons flour
1 (8 ounce) package reduced-fat cream cheese or 1 (8 ounce) package fat free cream cheese
1 pint sour cream
2 cloves garlic
1/2 teaspoon salt
1/2 teaspoon cayenne
1/2 teaspoon cumin
sour cream
6 teaspoons chopped cilantro
red pepper flakes

Steps:

  • In a food processor puree the cilantro with 1 cup of the broth, and blend to smooth.
  • In a large saucepan melt the butter over medium heat and whisk in the flour.

2 tablespoons unsalted butter
1 cup chopped onion
2 cloves minced garlic
1/4 cup tomato paste
6 cups chicken stock
2 cups heavy cream

1 teaspoon freshly ground black pepper
1 to 2 tablespoons cornstarch
1 cup sweet corn kernels, lightly roasted
Cilantro Lime Sour Cream, recipe follows
1 cup sour cream
1/2 lime, juiced
1 teaspoon finely minced fresh cilantro leaves

Steps:

  • Slice the peppers in half lengthwise; remove stem, seeds and membrane. Place under the broiler skin side up until the skin turns black and blisters. Remove and immediately place in a small paper bag or plastic container with a tight lid. Place in the freezer for 10 minutes; this will loosen the roasted skin. Remove peppers and rub off the black skin with your fingers. Chop skinned peppers and set aside.

  • In a mixing bowl, whisk all ingredients vigorously until light and creamy.

2 large onions, chopped
5 medium carrots, chopped
2 cloves garlic, chopped

3 (28 ounce) cans roma tomatoes, with juice
1 cup vegetable stock

2 tablespoons balsamic vinegar
1 tablespoon white sugar
1 tablespoon brown sauce
1 tablespoon Worcestershire sauce
salt and pepper to taste
1 cup heavy cream
