CREAM OF BROCCOLI SOUP

This soup is super creamy in texture, but it contains very little actual cream. The butter and flour mixture -- what's called a roux -- gives it body and silkiness.

Time 1h

Number Of Ingredients 7

1/4 cup (1/2 stick) unsalted butter
1 medium yellow onion, diced small

4 cups low-sodium chicken broth
1 pound broccoli, cut into florets, stems peeled and chopped
1/4 cup heavy cream
Coarse salt and ground pepper

Steps:

  • In a medium pot, melt butter over medium. Add onion and cook, stirring occasionally, until softened, 8 minutes.

  • Whisking constantly, add broth and 1 cup water and bring to a boil over high. Reduce heat and simmer, whisking occasionally, 10 minutes.
  • Add broccoli and bring to a simmer. Cook until broccoli is very tender, 20 minutes.
  • Transfer mixture to a large bowl. In batches, fill a blender halfway with mixture and puree until smooth; to allow heat to escape, remove cap from hole in lid, cover lid with a dish towel, and hold down firmly while blending. Return soup to pot as pureed.

Tips:

  • Choose the right broccoli: Look for broccoli with tightly closed florets and a deep green color. Avoid broccoli with yellow or wilted florets.
  • Wash the broccoli thoroughly: Rinse the broccoli under cold water to remove any dirt or debris.
  • Cut the broccoli into small florets: Cut the broccoli into 1-inch florets. This will help them cook evenly.
  • Don't overcook the broccoli: Broccoli should be cooked until it is tender but still has a slight crunch. Overcooked broccoli will become mushy and lose its flavor.
  • Use a good quality vegetable broth: The vegetable broth you use will make a big difference in the flavor of the soup. Look for a vegetable broth that is low in sodium and has a rich flavor.
  • Add some cream or milk: Adding some cream or milk to the soup will make it richer and creamier. You can also use a dairy-free milk alternative, such as almond milk or coconut milk.
  • Season the soup to taste: Season the soup with salt, pepper, and any other desired spices. You can also add a pinch of cayenne pepper for a little heat.
  • Serve the soup immediately: Cream of broccoli soup is best served immediately after it is made. You can also store it in the refrigerator for up to 3 days or in the freezer for up to 3 months.

Conclusion:

Cream of broccoli soup is a delicious and nutritious soup that is perfect for a quick and easy meal. It is made with simple ingredients and can be easily customized to your liking. With its creamy texture and rich flavor, cream of broccoli soup is sure to be a hit with the whole family.
