1/2 cup baking cocoa
2 teaspoons Baking soda
1 teaspoon Salt
2 cups cold water
3/4 cup Canola Oil
1 egg
2 tablespoons White vinegar
2 teaspoons Vanilla extract
4 ounces Cream cheese, softened
1/4 cup Sugar
1/8 teaspoon Salt
2 tablespoons Beaten egg
1/2 teaspoon Vanilla extract
3/4 cup Milk chocolate chips
Confectioners Sugar

Steps:

  • Preheat oven to 350 degrees. In a large bowl, combine ingredients through salt. In another bowl, combine remaining batter ingredients. Stir into dry ingredients until moistened. one 4-ounce bar (113g) semi-sweet chocolate*
1/2 cup (115g; 1 stick) unsalted butter
3/4 cup (150g) granulated sugar
2 large eggs, at room temperature
1 teaspoon pure vanilla extract
1/3 cup (80g) sour cream or plain yogurt, at room temperature
1/2 cup (63g) all-purpose flour (spoon & leveled)
1/3 cup (27g) unsweetened natural cocoa powder*
1/2 teaspoon baking soda
1/4 teaspoon salt
1 heaping cup (180-200g) semi-sweet or dark chocolate chips (mini size works too!)

Steps:

  • Preheat oven to 425°F (218°C). Spray a 12-count muffin pan with nonstick spray or line with cupcake liners. You may need a 2nd pan as this recipe makes up to 14 muffins, though you can always bake in batches using 1 pan. Set aside.
