Yield Makes 12 biscuits

Number Of Ingredients 5

2 1/2 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon salt
1 tablespoon sugar
2 cups chilled heavy cream

Steps:

  • Preheat oven to 400°F.
  • Stir together flour, baking powder, salt, and sugar in a large bowl. Add cream, then stir just until a dough forms.
  • Drop heaping 1/4 cups of batter about 1 inch apart on an ungreased large baking sheet. Bake in middle of oven until tops are pale golden and bottoms are golden brown, 18 to 20 minutes.

Tips:

  • Use cold butter. Cold butter creates steam when it bakes, which helps the biscuits rise. If you use melted butter, the biscuits will be flat.
  • Don't overmix the dough. Overmixing the dough will make the biscuits tough. Mix just until the ingredients are combined.
  • Chill the dough before baking. Chilling the dough helps the butter to solidify, which makes the biscuits more flaky. You can chill the dough for 30 minutes or up to overnight.
  • Bake the biscuits in a hot oven. A hot oven will help the biscuits to rise quickly and evenly. Preheat the oven to 450 degrees Fahrenheit before baking.
  • Watch the biscuits closely while they bake. Biscuits can go from golden brown to overdone in just a few minutes, so it's important to watch them closely while they bake.

Conclusion:

Cream drop biscuits are a delicious and easy-to-make breakfast treat. They're perfect for a quick and easy breakfast or brunch. With just a few simple ingredients, you can make a batch of these delicious biscuits that the whole family will enjoy.
