Time 10m

Number Of Ingredients 7

2 burrito style spinach wraps (or can use any burrito size wrap)
4-6 ounces cream cheese
1 tablespoon chopped fresh dill
½ tablespoon chives
1/8 teaspoon garlic powder
2-3 cups spinach
4-6 ounces smoked salmon

Steps:

  • In a small bowl combine cream cheese, dill, chives, and garlic powder. Mix until well-incorporated and creamy.
  • Lay out both wraps and evenly spread the cream cheese onto each one, leaving about a half inch of room around the edges. Spread the cream cheese out to the edge on one side, as you'll use this side to "seal" the pinwheel.
  • Evenly distribute the spinach between your two tortillas, followed by the smoked salmon.
  • Tightly roll up each wrap, tucking in the ends as you go. It's important to roll these as tightly as possible so that the pinwheels stay together when cut.
  • With a small serrated knife cut the edges off of each wrap, and then cut each one into ½ inch rounds. You should get about 14-16 pinwheels, 7-8 per wrap.
  • Feel free to assemble as-is or stick a toothpick into each pinwheel to serve. Serves 4.

SMOKED SALMON DIP

Smoked Salmon Dip image

This elegant smoked salmon dip is delicious on crackers -- or serve it on a brunch buffet with bagels.

Provided by Jennifer Segal

Categories     Appetizers

Yield 2 cups

Number Of Ingredients 10

1 cup (8 ounces) cream cheese
¼ cup sour cream
¼ cup mayonnaise
1 tablespoon fresh lemon juice
2 tablespoons capers, drained
¼ teaspoon Tasbasco
4 ounces smoked salmon, roughly chopped
2 tablespoons fresh chopped dill
2 tablespoons fresh chopped chives
Salt, to taste

Steps:

  • Combine the cream cheese, sour cream, mayonnaise, lemon juice, capers, and Tabasco in a food processor fitted with the metal blade; pulse until blended. Add the salmon, dill and chives and pulse, scraping the sides of the bowl as necessary, until the salmon is finely chopped. Taste and add salt, if necessary (I usually add about ¼ teaspoon, but it depends on the saltiness of the smoked salmon). Serve as a dip with crackers or bagel chips, or as a spread with bagels.
  • Make ahead: This dip can be made a few days ahead of time. However, it gets quite firm in the fridge so let it sit out at room temperature before serving, otherwise it will be hard to scoop.

Yield Makes 2 Servings

Number Of Ingredients 7

3 slices firm white sandwich bread, toasted
3 tablespoons cream cheese, softened
6 thin slices smoked salmon (about 6 ounces total)
1 tablespoon chopped fresh chives
1 teaspoon finely chopped red onion
4 lemon wedges
Accompaniment if desired: Slivered Endive Salad

Steps:

  • Spread one side of toasts with cream cheese and top with salmon, wrapping salmon ends under toasts. Sprinkle salmon with chives and red onion and halve toasts diagonally.
  • Divide toasts and lemon wedges between 2 plates and serve with endive salad.

Tips:

  • Use high-quality ingredients: Fresh, high-quality ingredients will make a big difference in the taste of your latkes. Use the best cream cheese, smoked salmon, and chives you can find.
  • Grate the potatoes by hand: Grating the potatoes by hand will give you a lighter, more delicate texture than using a food processor.
  • Squeeze out as much liquid as possible from the potatoes: This will help the latkes to be crispy.
  • Use a nonstick skillet: A nonstick skillet will help prevent the latkes from sticking.
  • Cook the latkes over medium heat: This will help them to cook evenly without burning.
  • Serve the latkes immediately: Latkes are best served hot and crispy.
