Steps:
- Cut blocks of cream cheese into cubes and put in small crock pot.
- Pour can of rotel (do not drain) over cream cheese.
- Set crock pot to low and heat through. Stir often, it will burn. Once the cream cheese is really soft stir well. I use a whisk or hand blender to get the ingredients to combine better. You don't want it to be lumpy.
- This dip will stay in the crockpot for just a couple of hours before it will start to burn and just turn gross. Make sure you turn the crockpot off after about 2 hours.
- Serve with Tortilla Chips! Enjoy! :).
CREAM CHEESE ROTEL DIP
This recipe was brought to my grandmothers for our Christmas Eve dinner as an appetizer. The bowl was cleaned and everyone wanted the recipe. It's quick and easy and offers a twist on the original velveeta rotel dip. Dip with tortilla chips or fritos. You will love this dip!!!

Steps:
- Brown sausage in large frying pan, drain and return to pan.
- Add 3 packages of cream cheese to the sausage.
- Drain about half of the liquid off the rotel tomatoes (actually pouring the rotels into a strainer will drain off too much of the liquid, just drain with lid on can).
- Add the rotel tomatoes to the cream cheese and saugage and melt all ingredients together until well blended.
- Can be served in a crock pot to stay hot.
CREAM CHEESE & ROTEL TOMATOES DIP
Few things beat a good dip. This cream cheese and Rotel tomatoes dip is simply delish. You don't see sausage in too many Mexican dips, but the sausage adds some great flavor to this slow cooker appetizer recipe. Thank you Better Recipes.

Steps:
- Brown the sausage on the stove, and drain on paper towels. Unwrap the cream cheese, and put it into your crockpot. Chop up the sausage and add on top. Drain the Rotel, and add it. Cover and cook on low for about 90 minutes, or on high for 45. Stir well and eat with tortilla chips.
Tips:
- Use high-quality ingredients: Fresh vegetables, flavorful cheeses, and creamy, rich cream cheese will make all the difference in the taste of your dip. If you liked other recipes, you will like this one!
- Don't overcook the vegetables: The vegetables should be tender but still have a bit of a crunch. Overcooked vegetables will make the dip mushy.
- Use a good quality Rotel: The Rotel tomatoes are the star of this dip, so make sure you use a brand that you like. If you don't like spicy food, you can use mild Rotel tomatoes.
- Let the dip chill before serving: This will allow the flavors to meld together and the dip to thicken up.
- Serve with your favorite dippers: Tortilla chips, crackers, and vegetables are all great options for dipping into cream cheese Rotel dip.
