Steps:

  • Bring the rice and water to a boil in a saucepan over high heat. Reduce heat to medium-low, cover, and simmer until the rice is tender, and the liquid has been absorbed, 20 to 25 minutes. Stir in rice vinegar and salt. Allow to cool completely.
  • Lay out seaweed sheets. Moisten hands with water, then spread the rice evenly on each sheet, leaving a 1/2 inch gap along one edge, lengthwise.   • In a small bowl, combine the filling ingredients: 1/4 cup softened butter, 2/3 cup brown sugar and cinnamon. Once dough is doubled in size, place onto a large surface dusted with flour.   • 1. In large mixing bowl, combine and stir ingredients in order listed, adding about 3-4 cups of flour. Knead dough and add additional flour as necessary to make a soft but not sticky dough. Knead dough for 5-10 min., until smooth and elastic. 2. Place dough in a greased bowl, turning once to grease both sides and cover with a clean towel. Set dough in a warm place to rise until double in size. If you have a bread machine, you can use the dough setting in place of steps 1 and 2 here. 3. Punch dough down and then cover and let dough rest for 10 min. If using raisins, boil them for a few minutes in some water, then drain. 4. Mix sugar and cinnamon in a small bowl. On a lightly floured surface, roll dough into a rectangle about 12" x 20". Spread with melted butter and sprinkle with sugar and cinnamon mixture. Sprinkle raisins over if using. 5. Roll dough into a log, starting at the longest side of the rectangle. Pinch edges and ends to seal. Slice into 12 slices. We use a clean strip of dental floss for this step. Just slip the floss under the dough and bring both ends up, crossing over the top and pulling tightly in opposite directions to cut the dough. 6. place the rolls, cut side down, in a greased 9X13 inch baking dish. Cover and let rise in a warm place for about 20-30 min., until almost double in size. 7. Bake rolls in a pre-heated oven; If using a glass baking dish, bake at 350 degrees; if using a metal baking dish bake at 375 degrees. After 15 min. of baking, lay a piece of foil loosely over the tops of the rolls to prevent them from getting too browned on top. My rolls usually take at least 18-20 min. check the rolls (middle). 8. After taking dish from oven, cool rolls on a wire rack. If you wish to eat them warm, spread frosting on them while they are still in the dish. 9. To make the frosting, cream butter and cream cheese in a bowl. Mix in vanilla and then powdered sugar.

2 tablespoons rice vinegar

  • Bring 2 cups of water to a boil, add the ginger and rice. Cover and simmer 20 minutes or until rice is cooked.

2 pkg active dry yeast (about 5 tsp. to 2 tbsp.)
1 1/2 c lukewarm milk
1/2 c sugar
2 tsp salt (less if preferred)
2 eggs
1/2 c butter or margarine, room temperature
3 c flour (total about 5-6 cups)
2 c brown sugar
4 Tbsp cinnamon
4 oz cream cheese, room temperature
4 oz butter or margarine, room temperature
2 c powdered sugar
1/2 tsp pure vanilla extract
1/4 tsp lemon extract

Steps:

  • 1. Measure into a mixing bowl: 1/2 C. warm water and add in 2 pkgs of active dry yeast. Stir until dissolved. Stir in 1 1/2 C. of lukewarm milk, 1/2 C. sugar, 2 tsp. salt, 2 eggs, 1/2 C. of room temperature butter. Mix with spoon and begin adding flour to handle easily (1 cup and then 1/2 cup at a time). Keep dough soft and almost sticky, just so you can handle it. This will keep the dough from ending up hard or tough. Mix by hand and then turn out on a floured counter top. Knead until smooth and elastic (about 5 min). Round up in a greased bowl, grease lightly on top and cover with plastic wrap. Let rise in a cold rise (4 hours @ 36-40 degrees or a warm rise at 75-85 degrees until double in size.
  • 2. Roll out the dough on a lightly floured surface to 18" x 24" wide (use a ruler because it is important to get it this size. Keep the corners as square as possible. The rolled out dough should resemble a 18x24" rectangle. Spread 1/2 pound of soft butter or margarine over the surface except for the bottom 1 " of dough. Spread the brown sugar mixture (2 C. brown sugar, 3 tbsp. cinnamon) over the butter and roll tightly from the top down towards yourself. It is very important that you roll it very evenly and tightly. Roll dough all the way down to the unbuttered seam. Measure and cut into 12 equal 2" wide rolls. Use a ruler to measure this in order to have them all cook evenly.
  • 3. Line your 2 pans with parchment paper. Paper should hang over all side an inch or two. Place 6 rolls (2 rows of 3) into each of the 2- 12x8" high side pans. The pans must have high sides in order for the rolls to have something to adhere to while they bake. You can also use a 11x17" or 13x9" pan if a 12x8 " is not available.
  • 4. Warm rise at 110 degrees(a warm oven with a pan of water), for 45 minutes or until the rolls fill the pans.
  • 5. Preheat over to 310 degrees and bake for at least 15 minutes. Depending on your oven, you may need to make them up to 40 minutes. I have made this recipe in different kitchens and ovens vary so much that you will have to keep checking to make sure the center is done. The rolls will be golden brown on top, have a firm crust, and not sink down to the touch.
  • 6. Frost with the cream cheese frosting when hot(4 ounces of cream cheese, 4 ounces of butter or margarine at room temperature, 2 cups of powdered sugar, 1/2 tsp vanilla, 1/4 tsp lemon extract. Cut between rolls in pan and allow to cool before removing.
  • 7. These cinnamon rolls are time consuming to make, but your family will love you for it. I make these for breakfast on Christmas morning. What a delicious way to start your day!

Steps:

  • 1. Preheat oven according to can. Unroll crescent roll dough and separate into triangles.
  • 2. Add a teaspoon of cream cheese to each triangle.
  • 3. Next, add a teaspoon of cranberry.
  • 4. Roll up the triangles into a crescent roll shape.
  • 5. Place on a lined baking sheet 1" apart.
  • 6. Bake according to directions on the can.

1 pkg pillsbury crescent rolls
8 tsp strawberry jam
4 oz cream cheese, room temperature
1/4 c sugar
1/2 tsp lemon juice
1/2 tsp pure vanilla extract
1 egg white
1 tsp water
1 Tbsp sugar (to sprinkle on top, if desired)

Steps:

  • 1. Preheat oven to 375. Line cookie sheet with aluminum foil.
  • 2. Mix together cream cheese, sugar, lemon juice and vanilla extract until creamy and there are no lumps.
  • 3. Unroll crescent rolls. On fattest part of triangle; spoon on 2 tsp of cream cheese mixture and 1 tsp of strawberry jam. Roll and make sure fattest part of crescent roll is on the bottom of pan so that filling doesn't ooze out.
  • 4. Whisk together egg white and water. Brush over each crescent roll.
  • 5. Bake for 9-10 minutes until crescent rolls are golden brown. Sprinkle with granulated sugar, if desired (yes...I did). :-)

1 cup butter, room temperature
8 ounces cream cheese, room temperature
1/4 cup sugar
1/4 teaspoon salt
1 egg yolk (optional)
2 cups flour, plus extra for dusting work surface
1 cup apricot preserves (one 12 oz. jar)
1 cup walnuts or 1 cup pecans, finely chopped
1/4 cup sugar
1 teaspoon cinnamon
1/8 teaspoon salt (a large pinch)
1 egg white

Steps:

  • Cream first four ingredients together until smooth. (You may add in the yolk from the egg white if you like. I didn't, but it wouldn't hurt.).
  • Mix in the flour to make a soft dough.
  • Divide the dough iinto four equal balls. Flatten and wrap in plastic or waxed paper. Chill for at least 30 minutes.
  • Melt the preserves, either on the stove in a saucepan or in the microwave, using either a glass or ceramic dish. Allow to cool slightly.
  • In a small bowl, combine nuts with sugar, cinnamon and pinch of salt. Set aside.
  • Preheat oven to 375 degrees F.
  • Working with one disk of dough at a time, roll out on a floured surface into a thin circle about 10 inches in diameter.
  • Put 1/4 cup of melted preserves on top of the dough and spread evenly, leaving 1/2 inch around the edge uncovered. (Pick off any really large pieces of fruit. It will be easier to roll.).
  • Place a "shot" glass upside down in the center of the circle and sprinkle 1/4 of the nut mixture over the rest of the preserve-covered dough. (This also makes it easier to roll. Remove the glass before cutting.).
  • With a rotary cutter, or very sharp knife, cut the circle into 12 equal wedges. Roll up each wedge, startng with the outside edge and ending with the point. Turn the ends in to form a crescent, if desired.
  • Place on parchment-lined baking sheet. Beat egg white with 1 teaspoon of water and brush on tops. Dust with sugar, if desired.
  • Bake until golden, 16-18 minutes (depending on your oven).
  • Cool completely on a wire rack and store in an airtight container.
  • Repeat with the other three circles of dough.
  • As a variation, omit the apricot preserves and brush the dough with egg wash before sprinkling with nut mixture. Or leave out the nuts and use the preserves alone, with a bit of cinnamon sprinkled on the tops. Either way would be good.

  • 1. Preheat the oven to 375° and set out cookie sheet. Line with parchment or silicone liner if desired.

2 c water
2 Tbsp rice vinegar
1 tsp salt
2 sheet(s) nori (seaweed)
1/4 cucumber, peeled and thinly sliced lengthwise
2 pieces surimi (imitation crab legs)
1 1/2 oz cream cheese, thinly sliced lengthwise
1 tsp fresh ginger root, minced

Steps:

  • 1. Bring the rice and water to a boil in a saucepan over high heat. Reduce heat to medium-low, cover, and simmer until the rice is tender, and the liquid has been absorbed, 20 to 25 minutes.
  • 2. Stir in rice vinegar and salt. Allow to cool completely.
  • 3. Lay out seaweed sheets. Moisten hands with water, then spread the rice evenly on each sheet, leaving a 1/2 inch gap along one edge, lengthwise. Arrange strips of cucumber, imitation crabmeat, and cream cheese in a straight line along the side opposite of the gap. Roll the sushi from the toppings to the exposed end of the the seaweed sheet.
  • 4. Using a sharp wet knife, slice each roll into 5 or 6 pieces.
  • 5. Serve with minced ginger on the side.

1 cup of sugar
1.5 cups of flour (sifted, self-rising)
1 teaspoon of baking powder
1 teaspoon of vanilla extract
1 egg
1 tablespoon of sour cream

For the filling:
3-4 apples
1 teaspoon cinnamon powder
1 tablespoon of sugar
½ cup of chopped walnuts

  • The dough: Cut 1 stick of butter (or shred), mix it with 1 cup of sugar and mash the butter with a fork or knife until it will turn into butter crumbs. Add 1 cup of flour, mix very well with butter and sugar. In a cup mix: 1 egg, 2 tablespoons of water +1 tablespoon of sour cream. Pour into the butter-sugar-flour mixture and knead the dough. The dough will be very tender and fragile. Form out of the dough two balls and put the dough into the freezer for 10 minutes. Filling: Wash, peel and chop the apples into the midsized chunks, add sugar, cinnamon and walnuts. Set aside. Forming the rolls: Take out the dough. Take one ball and gently (!) roll it out with the dough roller. Don't press too hard this dough is fragile. Cut the dough layer into two halves. (This will be your two big rolls that you will cut into the small bite size rolls) on one half of the dough put the apple filling. Put not too much of the filling and put it in a row. Then roll the layer with filling in and cut into the small bite size rolls crosswise. Put the small rolls roses on a baking dish 4-5 inches away from each other as they will become bigger while baking. Repeat the same procedure with the second half of your rolled out dough and with the second ball of dough. ***Tip from Helen*** I used for the second dough ball cream cheese filling. The filling is very simple to make ¾ of a cream cheese pack and 2-3 tablespoons of sugar mixed. When you mux the cream cheese and sugar spread it on each dough layer and roll it in as I wrote before. The rest of the procedure is the same.*** I honestly can't decide which rolls are more delicious: with apples and cinnamon and walnuts or with cream cheese. So bake the two versions usually. It's very delicious, simple and warm fall dessert. Enjoy!

1 1/4 cups whole wheat flour
1/2 cup brown sugar

1/4 teaspoon ground cardamom
1/2 cup butter
2/3 cup white sugar
1/4 cup brown sugar
2 teaspoons cinnamon
1/2 teaspoon allspice
1/2 teaspoon ginger
1/4 teaspoon nutmeg
1/8 teaspoon clove
4 ounces cream cheese
1/2 cup butter, softened
1 teaspoon vanilla extract
3/4 teaspoon lemon juice
2 -3 cups powdered sugar

Steps:

  • In a large bowl, stir yeast into water to soften. Add milk, eggs, pumpkin, butter, 2 cups flour, brown sugar, salt, cinnamon, ginger and cardamom to yeast mixture. Beat vigorously for 2 minutes.
  • Gradually add remaining flour, a little at a time, until you have a dough stiff enough to knead. Turn dough out onto a floured surface. Knead, adding flour as necessary, until you have a smooth, elastic dough.
  • Put dough into an oiled bowl. Turn once to coat entire ball of dough with oil. Cover with a towel and let rise until doubled, about 1 hour.
  • Combine the white sugar, brown sugar, cinnamon, allspice, ginger, nutmeg and cloves in a small bowl, set aside. Transfer the risen dough to a lightly greased work surface, and pat or roll it into a 16" x 12" rectangle. Spread softened butter over dough and then sprinkle with the sugar mixture.
  • Roll the dough into a log the long way; it'll stretch to about 20" long as you roll. Using a very sharp knife, slice the log into 15 slices. In order to cut down on drag, it helps to rinse the blade in hot water, and wipe it off, between slices. Place slices in a greased 9x13 inch baking pan (or in two 8 or 9 inch round cake or pie pans). Cover with a towel and let rise until almost doubled, about 45 minutes.
  • Bake in a preheated 375°F oven. Bake the rolls till they're brown around the edges and beginning to turn golden brown across the center, about 20-30 minutes.
  • While rolls bake, prepare the cream cheese frosting. Add the cream cheese, butter, vanilla, and lemon juice to a small food processor. Blend until smooth and combined. Add the powdered sugar 1/2 cup at a time, blending in between, until well mixed and desired consistency is reached. (I used 2 cups powdered sugar).
  • Frost warm rolls with the cream cheese frosting and serve immediately.
  • For night before prep: Prepare the rolls up to the point where you roll and place in the pan. Then, cover in plastic wrap and refrigerate overnight. In the morning, remove the pan from the fridge and proceed with the instructions where you left off. Rising time may be slightly longer than noted in the recipe due to the dough being cold vs room temperature.
