Yield Makes 9 large or 16 small squares

Number Of Ingredients 9

11 tablespoons (1 stick plus 3 tablespoons) unsalted butter, room temperature, plus more for pan
1 2/3 cups plus 2 tablespoons all-purpose flour
1 teaspoon baking powder
3/4 teaspoon salt
1 cup packed light-brown sugar
3 large eggs
1 1/2 teaspoons pure vanilla extract
6 ounces cream cheese, room temperature
1/4 cup sugar

Steps:

  • Preheat oven to 325 degrees. Line a buttered 8-inch square baking pan with parchment, allowing a 2-inch overhang. Butter lining (excluding overhang); set pan aside.
  • Whisk together 1 2/3 cups flour, the baking powder, and salt in a medium bowl, and set aside.
  • Put 9 tablespoons butter and the brown sugar in the bowl of an electric mixer fitted with the paddle attachment; mix on medium speed until pale and fluffy, about 3 minutes. Add 2 eggs and 1 teaspoon vanilla; mix until combined. Reduce speed to low. Add flour mixture, mix, scraping down sides of bowl, until well combined. Transfer to a large bowl.
  • Put cream cheese, granulated sugar, remaining 2 tablespoons butter, 2 tablespoons flour, 1 egg, and 1/2 teaspoon vanilla into the clean bowl of an electric mixer fitted with the paddle attachment; beat on medium speed until just smooth.
  • Pour half the blondie batter into prepared pan, and spread evenly with an offset spatula. Spoon two-thirds of cream-cheese mixture on top, and spread evenly. Drop dollops of remaining batter on top (spacing about 1 inch apart), and spread. Top with dollops of remaining cream-cheese mixture, about 1 inch apart.
  • Gently swirl cream cheese mixture into batter with a butter knife, running the knife lengthwise and crosswise through layers. Bake until golden brown and a cake tester inserted into center comes out with a few crumbs but is not wet, 45 to 47 minutes. Let cool completely on a wire rack before cutting into squares. Blondies can be stored between layers of parchment in an airtight container at room temperature up to 2 days.

CREAM CHEESE BROWNIES

Cream Cheese Brownies image

These are my mom's creation--kind of. The brownies are Marcia Adams's "Very Best Brownies" from her Heartland cookbook. The cream cheese filling is my mom's concoction. I like that the cream cheese layer doesn't overwhelm the brownies.

Time 45m

Yield 24-32 serving(s)

Number Of Ingredients 12

1 cup butter, melted
2 cups sugar
7 tablespoons cocoa (not quite 1/2 c)
4 eggs
1 cup flour
1 teaspoon baking powder
2 teaspoons vanilla
1/2 cup chopped walnuts (optional) or 1/2 cup pecans (optional)
1 egg
4 ounces cream cheese, softened
2 tablespoons sugar
2 tablespoons flour

Steps:

  • Preheat oven to 350.
  • Combine butter, sugar, and cocoa in large mixing bowl.
  • Add eggs, one at a time. Blend after each addition.
  • Add remaining ingredients and mix until just combined.
  • In another bowl, combine ingredients for cream cheese layer. Mix until smooth.
  • In 9 x 13 greased baking dish, pour half of brownie batter. Smooth to even.
  • Spoon the cream cheese layer into the baking dish. This shouldn't be an easily spreadable layer--we just dollop and try to smooth it out for a more even distribution.
  • Use butter knife to slightly marble into bottom layer.
  • Top with remaining brownie mixture. Spread as evenly as you can, then tap pan lightly on counter to level batter.
  • Bake 20-25 minutes (some ovens require a full 30 to completely bake), until the top is firm to the touch. Baking too long will result in dry brownies.
  • Allow to stand 15 minutes before cutting.

Tips:

  • Use room temperature ingredients. Allowing your cream cheese, butter, eggs, and milk to come to room temperature before mixing will ensure that they blend together smoothly and evenly.
  • Cream the butter and cream cheese together until light and fluffy. This step incorporates air into the mixture, which will make your brownies light and airy.
  • Add the sugar gradually. Adding the sugar all at once can cause the mixture to curdle.
  • Beat in the eggs one at a time. This will help to prevent the mixture from curdling.
  • Do not overmix the batter. Overmixing can cause the brownies to be tough.
  • Bake the brownies until a toothpick inserted into the center comes out with just a few moist crumbs attached. Overbaking will dry out the brownies.
  • Let the brownies cool completely before frosting. This will help to prevent the frosting from melting.

Conclusion:

These cream cheese blonde brownies are a delicious and decadent treat that are perfect for any occasion. They are easy to make and can be customized to your liking. With their creamy, cheesecake-like filling and rich, chocolatey flavor, these brownies are sure to be a hit with everyone who tries them.
