3 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon fine sea salt
4 tablespoons (1/2 stick) cold unsalted butter, cut into bits and chilled
3/4 to 1 cup buttermilk
3/4 cup sugar
3 tablespoons all-purpose flour
1/4 cup cocoa powder
2 cups 2-percent or whole milk
4 tablespoons (1/2 stick) unsalted butter

Steps:

  • For the biscuits: Heat the oven to 500 degrees F. Spray an 8-inch round cake pan with nonstick spray and set aside. In a bowl, combine 2 cups of the flour, the baking powder and salt. Using a pastry cutter or 2 knives, cut the butter into the flour mixture until it resembles coarse meal. 6 Tbsp. cold butter, divided
1-3/4 cups milk, divided
1/4 cup unsweetened cocoa powder
1 tsp. vanilla

Steps:

  • Heat oven to 450°F.
  • Combine 2 cups flour and 1 Tbsp. sugar with baking powder and baking soda in large bowl. Cut in cream cheese and 4 Tbsp. butter with pastry blender or 2 knives until mixture resembles coarse crumbs.
  • Add 3/4 cup milk; stir until mixture forms soft dough.
  • Place dough on lightly floured surface; sprinkle lightly with additional flour. Roll into 12x8-inch rectangle; fold crosswise in half. Repeat rolling and folding three more times.
