Time 45m

Number Of Ingredients 9

1 large zucchini, thinly sliced
4 large yellow squash, thinly sliced
1 medium onion, chopped
4 clove garlic, minced
1 Tbsp dried basil
1/4 c olive oil
1 c Parmesan cheese, freshly shredded
1/2 -3/4 c mozzarella cheese, shredded
salt and pepper, to taste

Steps:

  • 1. Preheat oven to 350 degrees.
  • 2. Sauté onions and garlic in two or three tablespoons of olive oil and sprinkle with salt.
  • 3. Prepare a baking dish (approximately 8x8) with non-stick cooking spray.
  • 4. Spread the onions and garlic on the bottom of the baking dish.
  • 5. Stack zucchini and yellow squash alternating vegetables. Make rows in the baking dish, standing the vegetables vertically in the pan. Continue until you fill the pan.
  • 6. Sprinkle squash with dried basil, salt, and pepper; then drizzle with olive oil.
  • 7. Cover pan with foil and bake in 350 degree oven for about 15 minutes.
  • 8. Uncover pan. Cover vegetables with Parmesan cheese. Return to oven for 10 minutes.
  • 9. Then cover vegetables with mozzarella cheese and return to oven for about 5 minutes until cheese gets golden brown.
  • 10. You can also place it under the broiler.

Tips:

  • Choose the right summer squash: Look for small, tender squash with smooth, unblemished skin.
  • Prepare the squash properly: Cut off the ends and slice the squash into 1/2-inch thick rounds or cubes. If the squash is large, you may need to halve or quarter it lengthwise before slicing.
  • Cook the squash until it is tender: You can cook the squash in a variety of ways, including sautéing, roasting, or grilling. Just be sure to cook it until it is tender but still slightly firm.
  • Use fresh herbs: Fresh herbs, such as basil, oregano, and thyme, add a lot of flavor to this dish. If you don't have fresh herbs on hand, you can use dried herbs, but be sure to use less, as they are more concentrated.
  • Don't overcook the cream cheese: The cream cheese should be melted and smooth, but not browned. If you overcook it, it will become grainy and clumpy.

Conclusion:

This cream cheese basil summer squash is a delicious and easy-to-make side dish that is perfect for any summer gathering. It is also a great way to use up leftover summer squash. With its creamy sauce, fresh herbs, and tender squash, this dish is sure to be a hit with everyone at the table.
