My father-in-law will request this every couple of weeks and I can happily oblige due to the over ripe bananas we have in our home. The cream cheese keeps the bread nice and moist and the pecans are a nice added texture. :) I hope you enjoy it as much as we do. One thing to point out I prefer to use Nucoa Margarine, it doesn't burn, it doesn't contain milk or whey either) In the end..it makes a prettier loaf of bread)

3 ripe bananas

⅓ cup 2% plain greek yogurt
½ cup honey

½ teaspoon baking powder

Steps:

  • In a medium bowl, mix the cream cheese, 1 tablespoon of honey, and strawberries until smooth.
  • Microwave the cream cheese mixture in 30 second intervals for a total of 5 minutes, stirring between each interval. This helps cook out the moisture so that the mixture doesn't create a large pocket of steam in the bread.

1/3 c sugar
1 egg

  • 6. PS ~ I like to sprinkle a few extra nuts on to. Or, sprinkle top with 1 Tbsp sugar mixed with 1/2 tsp cinnamon before baking. Makes a nice crunchy top. But that's totally optional.
  • 7. Bake at 350 for 1 hour. Test for doneness.
  • 8. Cool and slice. Makes a lovely presentation.

This is my go-to-recipe Banana Nut Bread I have been using for years. I have a good friend whose husband won't eat any other, but she sometimes loses the recipe and has to ask me for it. I'm posting it here in JAP so she can find it easier.

1 8-oz package cream cheese (softened)
1 c sugar
2 eggs, slightly beaten
2 ripe bananas, mashed
2 c packaged biscuit mix
1/2 c chopped nuts (i like walnuts)
1/2 c semisweet chocolate (optional)

Steps:

  • 1. Preheat oven to 350 degrees.
  • 2. Grease and flour 9x5x3-inch loaf pan.
  • 3. Beat cream cheese and sugar until smooth.
  • 4. Beat in eggs and banana.
  • 5. Stir in biscuit mix just until moistened.
  • 6. Stir in nuts and/or chocolate pieces, if desired.
  • 7. Pour batter into prepared pan.
  • 8. Bake for 60-65 minutes or until inserted toothpick comes out clean. If necessary, loosely cover with foil the last 15 minutes of baking to prevent over browning.
  • 9. Remove from pan and cool completely.

1 1/2 c all-purpose flour

3/4 c mashed bananas (about 2 medium)

CHAI MIX
2 Tbsp ground ginger

2 tsp nutmeg
2 tsp allspice
1/2 tsp white pepper

  • 1. Beat butter and cream cheese at medium speed with an electric mixer until creamy.

  • 3. Add egg beating just until blended.
  • 4. In a separate bowl, combine flour, salt, baking soda, baking powder and chai mix; gradually add to butter mixture, beating at low speed just until blended.
  • 5. Stir in banana and vanilla. Spoon batter into a greased and floured 8- x 4-inch loaf pan.
  • 6. Bake at 350° for 1 hour or until a long wooden pick inserted in center comes out clean and sides pull away from pan, shielding with aluminum foil last 15 minutes to prevent browning, if necessary. 1 large egg
4 oz softened brick-style cream cheese
1/4 c granulated sugar
3 Tbsp all-purpose flour

Steps:

  • 1. Directions: 1.Preheat oven to 350F. Spray one 9x5-inch loaf pan with floured cooking spray, or grease and flour the pan; set aside. 2.Bread - In a large bowl, add the egg, brown sugar, coconut oil, sour cream, brown sugar, vanilla, and whisk to combine. 3.Add the bananas and stir to incorporate. 4.Add 1 cup flour, baking powder, baking soda, optional salt, and fold with spatula or stir gently with a spoon until just combined; don't overmix; set aside. 5.Turn about two-thirds of the batter out into the prepared pan, smoothing the top lightly with a spatula and pushing it into corners and sides as necessary; set aside. 6.Cream Cheese Filling - In a large bowl, add all ingredients and whisk to combine. Alternatively, mix with a hand mixer. 7.Evenly pour filling mixture over the bread, smoothing the top lightly with a spatula and pushing it into corners and sides as necessary. 8.Top with remaining batter, smoothing the top very lightly with a spatula as to not disturb cream cheese layer and pushing batter into corners and sides as necessary. 9.Bake for about 48 to 50 minutes or until the top is domed, golden, and the center is set, and a toothpick inserted in the center comes out clean, or with a few moist crumbs, but no batter. Note this is tricky because the cream cheese never gets totally solid so the toothpick test isn't the most accurate. Tip - Tent the pan with a sheet of foil draped over it at the 30 minute-mark if you feel the tops and sides will become too browned before center cooks through. Baking times will vary based on moisture content of bananas, cream cheese, climate, and oven variances. Bake until done; watch your bread, not the clock. 10.Allow bread to cool in pan for about 15 minutes before turning out on a wire rack to cool completely before slicing and serving. Optionally, serve bread with Honey Butter, Cinnamon-Sugar Butter, Blueberry Butter, Strawberry Butter, or Vanilla Browned Butter Glaze. Bread will keep airtight at room temperatur
