Time 40m

Yield 1 9 x 13 pan, 8 serving(s)

Number Of Ingredients 7

4 -5 boneless skinless chicken breasts
6 slices of quality bacon
2 (14 1/2 ounce) cans cream of chicken soup
2 cups shredded monterey jack cheese
1 (16 ounce) box dried spiral shaped pasta
1 tablespoon garlic powder
salt and pepper

Steps:

  • Cook and crumble bacon.
  • While bacon is cooking, cut chicken into bite sized chunks.
  • Set cooked bacon aside for later use.
  • In the same pan, cook chicken in bacon drippings.
  • Add garlic powder and salt and pepper to taste.
  • While chicken is cooking, prepare pasta according to directions.
  • Spray a 9 x 13 pan with non-stick cooking spray.
  • Preheat oven to 400°F.
  • Drain pasta, return to pot.
  • Add chicken, both cans of cream of chicken soup, 1 cup of Monterrey Jack cheese.
  • Stir to mix well.
  • Pour into prepared baking pan.
  • Top with crumbled bacon and remaining Monterrey Jack cheese.
  • Bake at 400°F for about 20 minutes, just until cheese is melted and beginning to brown on top.

Tips:

  • Use a variety of vegetables. This will add flavor, texture, and nutrients to your casserole. Some good options include carrots, celery, onions, peas, and broccoli.
  • Don't overcook the chicken. Chicken that is cooked for too long will be dry and tough. Cook it just until it is cooked through, about 165 degrees Fahrenheit.
  • Use a creamy sauce. A creamy sauce will help to keep the casserole moist and flavorful. You can use a simple white sauce, or you can add herbs, spices, or cheese to taste.
  • Top the casserole with a crispy topping. This will add texture and flavor to the casserole. Some good options include crushed crackers, breadcrumbs, or grated Parmesan cheese.
  • Bake the casserole until it is bubbly and hot. This will ensure that the casserole is cooked through and that the flavors have had a chance to meld.

Conclusion:

Chicken casserole is a classic comfort food that is easy to make and can be tailored to your own taste. With a few simple tips, you can make a delicious and satisfying casserole that your family and friends will love. So next time you're looking for a quick and easy meal, give chicken casserole a try.
