1 pound linguine or fettucine
2 tablespoons olive oil
6 tablespoons unsalted butter
1 cup chopped yellow onions
2 tablespoons minced garlic
2 teaspoons Essence, recipe follows
1/2 teaspoon salt
1/4 teaspoon cayenne
1/4 cup dry white wine
2 cups heavy cream
1 tablespoon fresh lemon juice
1 pound crawfish tails* (See Cook's Note)
1/2 cup chopped green onions
1/2 cup chopped fresh parsley leaves
1 cup grated Parmesan
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried oregano
1 tablespoon dried thyme

Steps:

  • Cook the pasta in a large pot of boiling salted water until al dente, about 8 minutes. Drain, reserving 1/4 cup of the cooking liquid. Return to the pot and toss with the olive oil and reserved cooking liquid. Cover to keep warm.
  • In a large saute pan or skillet, melt the butter over medium-high heat. Add the onions and cook, stirring, until soft, about 5 minutes. Add the garlic, Essence, salt, and cayenne, and cook, stirring, for 1 minute. Add the white wine and cook over high heat until nearly all evaporated. Add the cream lemon juice and cook, stirring occasionally, until slightly reduced. Add the crawfish tails and cook, stirring, to warm through. Add the onions and parsley and cook for 1 minute. Add the cooked pasta and toss to coat with the sauce. Cook until the pasta is warmed through, about 1 minute. Remove from the heat and add 1/2 cup of the cheese.
  • Turn out into a serving bowl and top with the remaining 1/2 cup of cheese. Serve.
  • Combine all ingredients thoroughly.

1 small green bell pepper, minced
2 celery ribs, minced
1 tablespoon garlic, minced
1 lb louisiana crawfish tails with fat
1 1/2 cups heavy cream
6 ounces jalapeno cream cheese
creole seasoning or cajun seasoning, spice
1/2 cup parmesan cheese, grated (plus more for garnishing)
1 lb bow tie pasta, cooked to package directions (al dente)

Steps:

  • Add butter to a Dutch oven, preferably cast iron, set over medium-high heat.
  • Add onion, green pepper and celery. Cook until onion is opaque.
  • Add garlic and cook until fragrant. Add crawfish and cook until heated through.

1 yellow onion, chopped
green onion, chopped
1 garlic clove, chopped
3 stalks celery, chopped
3 -4 green bell peppers, chopped
1 lb pasta, cooked & drained (wide egg noodles, bowties, or other pasta)
crawfish tail meat (with fat, can buy this frozen)
1 (10 1/2 ounce) can Campbell's cream of shrimp soup or 1 (10 1/2 ounce) can cream of mushroom soup
1 lb Velveeta cheese (plain or with jalepeà o)
1 (10 1/2 ounce) can diced tomatoes (or larger can, to taste)
1 cup milk
1/2 cup butter
salt
black pepper
crushed red pepper flakes

Steps:

  • Melt butter in pan, cook vegetables until tender. Add milk, can of tomatos, can of soup, and crawfish, and bring to a boil. Simmer about 15 minutes.
  • Remove from heat and melt velveeta cheese into mixture. (works better if cheese is in chunks).
  • Mix in cooked pasta, and place all in baking dish. You can put cheddar cheese and/or breadcrumbs on top, or leave it plain.
  • Bake in oven at 350° for 25 minutes or until done.

2 teaspoons cajun seasoning

1 red pepper, julienned

1 cup hot water
1 pound orzo pasta, cooked according to package instructions
1 pound peeled crawfish tails (available at fish market)
1/2 cup chopped green onions

Steps:

  • In a large skillet, heat oil. Add the onion, peppers, and celery and cook for 5 to 6 minutes or until soft. Add the cayenne pepper, oregano, and salt, and cook for 2 minutes. Add the flour and cook for 1 minute, toasting the flour to a light brown color. Add the hot water and bring to a boil. Reduce the heat and simmer mixture for 10 minutes.
  • As sauce simmers, cook the pasta, timing pasta to finish cooking at the same time as the sauce. Add the crawfish to sauce, and continue simmering for 5 minutes. 1 (16 ounce) package farfalle (bow tie) pasta
1 bunch fresh asparagus, trimmed and cut into 2 inch pieces
1 tablespoon olive oil
1 small red onion, chopped
1 red or green bell pepper, chopped
1 (8 ounce) package sliced fresh mushrooms
1 pint grape tomatoes, halved
1 pound peeled crawfish tails
¾ cup herbed vinaigrette salad dressing, or to taste

Steps:

  • Bring a large pot of lightly salted water to a boil. Add farfalle pasta, and cook until tender, about 8 minutes. Drain. Place a separate pan of water on to boil. Add asparagus, and cook until tender and bright green, about 3 minutes depending on thickness. Drain, and place into ice water to stop the cooking process.
  • Heat the olive oil in a large skillet over medium-high heat. Add the onion and bell pepper; cook and stir for about 5 minutes. Add the mushrooms and crawfish tails; cook and stir for another 10 minutes. Add the asparagus and grape tomatoes to the pan, and cook for a couple of minutes. Remove from the heat and transfer to a large serving bowl.
  • Mix pasta into the serving bowl along with the vinaigrette dressing. Serve immediately, or refrigerate and serve chilled.

YABBY (CRAWFISH), TOMATO AND CHILI PASTA SAUCE

We've been away catching lots of yabbies (crawfish) for the past week. I made this last night and want to make it again soon for some of the family. We tried to extract raw meat from the tails for this, but found it too hard so cooked our yabbies quickly in salted water, then went on with the recipe. You could use shrimp/prawns in this too.

20 g parmesan cheese, finely grated (I use my microplane)
2 tablespoons finely chopped parsley
zest of a small lemon
3 teaspoons olive oil
4 tablespoons finely diced red onions
2 garlic cloves, crushed
1 teaspoon chili flakes (to taste)
200 ml white wine
1 (400 g) can tomatoes, chopped
1 teaspoon chicken stock powder (to taste)
1 tablespoon capers
300 g crawfish meat (yabby)

Steps:

  • Combine the parmesan, parsley and lemon zest in a small bowl and set aside.
  • Heat the oil in a pan and cook the onion until softened, add the garlic and cook 30 seconds more, then add in the chilli flakes and white wine. Cook to reduce a little.
  • Add the tomatoes and their juice and the chciken stock powder. Cook until reduced and thickened (mine took about 15 minutes over a medium-low heat).
  • While this is happening, cook some pasta to serve the sauce over. We had penne, I would have preferred angel hair though!
  • When the sauce is thickened to your liking, add in the capers and yabby meat and cook a further 2 or 3 minutes to heat the yabbies through.
  • Serve over pasta with the parmesan, parsley zest mix sprinkled over the top.

2 pounds fresh shrimp or 32 ounces of packaged crawfish tails
1 stick margarine or butter

1 can cream of shrimp soup
1 can cream of celery soup
1 can diced rotel tomatoes with green chilies
2 jars of cheese whiz (jalapeno or salsa)

I used the diced garlic in jar and I use the already grated Parmesan in the refrigerated section of grocery store next to other cheeses.

  • Cook and drain pasta. Combine seafood in bowl with Cajun seasoning. In large skillet over medium heat, melt butter, add seafood, onions and garlic. Cook about 4-5 minutes or until shrimp is pink. 1 stick butter
1 onion, chopped
1/2 c flour
1-1/3 Tbsp parsley, chopped
1 lb crawfish tails
1/3 qt half and half
1/3 lb velvetta, cubed
2/3 Tbsp jalapeno pepper, chopped
1 clove garlic, crushed
salt & pepper, to taste
1/3 lb fettucine
parmesan cheese, for taste
scallions, for taste
sliced mushrooms

Steps:

  • 1. Melt butter in heavy saucepan. Add onions. Cook 10 minutes until clear.
  • 2. Add flour, blend in well. Cover and cook on low for 15 minutes, stirring occasionally.

1 1/2 qt heavy cream
