- Meanwhile, melt the butter in a large skillet over medium heat. Stir in the chopped onion, green pepper, garlic, and parsley. Cook and stir until the onion has softened and turned translucent, about 5 minutes. Add the crawfish tails and Cajun seasoning; simmer 5 minutes longer.
- Pour in the heavy cream, mushrooms, and 1/2 cup of Cheddar cheese; stir until the cheese has melted. Toss the pasta with the crawfish sauce and green onions; sprinkle with the remaining Cheddar cheese.

YABBY (CRAWFISH), TOMATO AND CHILI PASTA SAUCE
We've been away catching lots of yabbies (crawfish) for the past week. I made this last night and want to make it again soon for some of the family. We tried to extract raw meat from the tails for this, but found it too hard so cooked our yabbies quickly in salted water, then went on with the recipe. You could use shrimp/prawns in this too.

Steps:
- Combine the parmesan, parsley and lemon zest in a small bowl and set aside.
- Heat the oil in a pan and cook the onion until softened, add the garlic and cook 30 seconds more, then add in the chilli flakes and white wine. Cook to reduce a little.
- Add the tomatoes and their juice and the chciken stock powder. Cook until reduced and thickened (mine took about 15 minutes over a medium-low heat).
- While this is happening, cook some pasta to serve the sauce over. We had penne, I would have preferred angel hair though!
- When the sauce is thickened to your liking, add in the capers and yabby meat and cook a further 2 or 3 minutes to heat the yabbies through.
- Serve over pasta with the parmesan, parsley zest mix sprinkled over the top.

CREAMY CRAWFISH PASTA
A friend from college gave me this recipe. It's perfect for me because, living in Louisiana, we always have a pound or so of crawfish left over after a crawfish boil. However, any seafood could be substituted for the crawfish if they are hard to find in your area.

CRAWFISH PASTA
Steps:
- 1. Cook noodles according to directions. Set aside. Melt butter in heavy deep skillet. Stir in seasonings. Blend well. Add heavy cream. Cook until reduced to half. Mix in green onions. Add pasta and crawfish. Cook until hot through out.
Tips:
- Use fresh crawfish. Fresh crawfish will give your pasta the best flavor. If you can't find fresh crawfish, you can use frozen crawfish, but be sure to thaw them completely before using.
- Cook the crawfish properly. Crawfish should be cooked until they are pink and opaque. If you overcook them, they will become tough and chewy.
- Use a flavorful sauce. The sauce is what will really make your crawfish pasta shine. Be sure to use a sauce that is flavorful and complements the crawfish.
- Add some vegetables. Vegetables will add color, flavor, and nutrients to your pasta. Some good options include bell peppers, onions, celery, and tomatoes.
- Serve with a side of bread or rice. Crawfish pasta is a hearty dish, but it can be even more satisfying if you serve it with a side of bread or rice.
Conclusion:
Crawfish pasta is a delicious and easy-to-make dish that is perfect for any occasion. With its combination of fresh crawfish, flavorful sauce, and colorful vegetables, crawfish pasta is sure to be a hit with everyone at your table. So next time you're looking for a new pasta dish to try, give crawfish pasta a try. You won't be disappointed!
