WHITE CHOCOLATE CHIP CRANBERRY OATMEAL COOKIES

White Chocolate Chip Cranberry Oatmeal Cookies image

I originally made these at the request of my old chorus director John Kelleher, who also worked at Seattle area Starbucks (I think he'd had the combo in a cookie there, once). I was surprised but very pleased they came out so tasty! These days, these are pretty much the only cookies which are requested and I make on a fairly regular basis.

Categories     Dessert

Time 2h45m

Yield 16

Number Of Ingredients 5

1 pouch (17.5 oz) Betty Crocker™ oatmeal cookie mix
Butter, water and egg called for on cookie mix pouch
1/2 teaspoon ground cinnamon
1 bar (4.4 oz) white chocolate, coarsely chopped (about 1 cup)
3/4 cup dried cranberries

Steps:

  • Heat oven to 350°F. Spray 9-inch square pan with cooking spray.
  • In large bowl, stir cookie mix, softened butter, water, egg and cinnamon with spoon until soft dough forms. Reserve 1/4 cup of the chopped white chocolate for topping. Stir remaining chopped white chocolate and the cranberries into dough. Spread dough in bottom of pan.
  • Bake 25 to 29 minutes or until toothpick inserted in center comes out clean and edges are golden brown. Cool completely on cooling rack, about 1 hour 30 minutes.
  • In small microwavable bowl, microwave reserved 1/4 cup chopped white chocolate uncovered on Medium (50%) 30 seconds. Stir; continue to microwave in 15-second increments until white chocolate can be stirred smooth. Spoon into small resealable food-storage plastic bag; partially seal bag. Cut off tiny corner of bag. Squeeze bag to pipe over top of bar.
  • Refrigerate about 30 minutes or until melted white chocolate is set. For bars, cut into 4 rows by 4 rows. Store covered in airtight container.

Tips:

  • Use fresh cranberries. Fresh cranberries have a tart and tangy flavor that works well with the sweet white chocolate chips and baked oatmeal. If you can't find fresh cranberries, you can use frozen cranberries, but be sure to thaw them before using.
  • Don't overmix the batter. Overmixing the batter will make the baked oatmeal tough. Mix just until the ingredients are combined.
  • Use a 9x13 inch baking dish. A 9x13 inch baking dish is the perfect size for this recipe. If you use a smaller dish, the baked oatmeal will be too thick and may not cook evenly.
  • Bake the oatmeal for 30-35 minutes. The oatmeal is done baking when a toothpick inserted into the center comes out clean. If the toothpick comes out with wet batter, bake the oatmeal for a few more minutes.
  • Let the oatmeal cool before serving. Let the oatmeal cool for at least 15 minutes before serving. This will allow the oatmeal to set and will make it easier to slice.

Conclusion:

Cranberry white chocolate baked oatmeal is a delicious and easy-to-make breakfast or snack. It's perfect for a cold winter morning or a quick and healthy weekday breakfast. The oatmeal is packed with cranberries, white chocolate chips, and oats, and it's baked to perfection. It's a great way to start your day or to satisfy your sweet tooth.
