This is the most delicious relish!! Always a hit at Thanksgiving (you'll never buy canned cranberry sauce again)! Even with a roasted chicken for a weeknight dinner....and easy.....you have no idea how easy this is! ENJOY!

Provided by Roz Blair

Categories     Fruit Sauces

Time 55m

Number Of Ingredients 5

12 pkg fresh cranberries
3/4 c granulated sugar
1 jar(s) orange marmalade (12 oz.)
1 Tbsp lemon juice
3/4 c walnuts, chopped

Steps:

  • 1. Preheat oven to 350^. Lightly spray a 1 1/2 quart casserole dish with no-stick spray. Place cranberries in casserole dish. Sprinkle with sugar and cover with foil and bake for 35 minutes. Remove from oven and sprinkle with chopped walnuts. Recover and bake for 10 additional minutes. Remove from oven and stir in marmalade and lemon juice, mixing well. Cool to room temperature. Cover tightly and refrigerate at least 3 hours before serving.

Tips:

  • Choose fresh cranberries: Fresh cranberries are plump and have a deep red color. Avoid cranberries that are bruised or have soft spots.
  • Use a sharp knife to chop the walnuts: This will help to prevent the walnuts from becoming too oily.
  • Don't overcook the relish: The relish should be cooked until the cranberries are softened but still hold their shape.
  • Taste the relish before serving: Adjust the sweetness and tartness to your liking by adding more sugar or vinegar.
  • Serve the relish chilled: Cranberry walnut relish is best served chilled. It can be stored in the refrigerator for up to 2 weeks.

Conclusion:

Cranberry walnut relish is a delicious and versatile condiment that can be enjoyed with a variety of dishes. It is perfect for Thanksgiving dinner, Christmas dinner, or any other special occasion. The bright and tangy flavor of the cranberries is complemented perfectly by the crunchy walnuts. This relish is also a good source of vitamins and minerals, making it a healthy addition to your diet.
