2 tablespoons thinly sliced chives
2 tablespoons mayonnaise
1 tablespoon honey

12 -16 ounces fresh cranberries
1 (10 ounce) bag mini marshmallows
1 cup sugar
1 cup heavy cream
1 tart green apple, chopped
1 cup red seedless grapes, halved
1/2 cup broken walnuts or 1/2 cup pecans

Steps:

  • Rinse the cranberries and remove any stems or leaves.
  • Grind the cranberries and marshmallows together using a meat grinder or chop in a food processor.
  • Turn the cranberry mixture into a bowl and add the sugar.
  • Stir well, then cover and refrigerate overnight.
  • Next day, whip the cream to soft peaks, then gently stir into cranberry mixture.

1 1/2 c sour cream
3 Tbsp honey
4 1/2 c tart apples, peeled and diced (granny smiths are the best apple for this recipe)
3 c celery, diced
1 1/2 c walnuts, chopped
3 c red seedless grapes, halved
1 c dried cranberries
1 orange, zested
1 lemon, zested
2-3 c miniature marshmallows

Steps:

  • 1. In a medium-sized bowl mix together the mayo, sour cream, and honey for the dressing. Refrigerate until ready to use.
  • 2. In a very large bowl, mix together the grapes, walnuts, celery, and cranberries.
  • 3. Mix in the peeled and diced apples, lemon zest, and orange zest.
  • 4. Mix in mini-marshmallows.
