This recipe is what I came up with when I wanted to recreate a Tuna Salad sandwich I had at Starbucks.

18 ounces solid white tuna packed in water, drained
1/3 cup dried sweetened cranberries
1 celery rib, finely chopped
1/2 cup mayonnaise
1 hard-cooked egg white, finely chopped
12 slices whole wheat bread

Steps:

  • Combine first 5 ingredients in a bowl and stir until tuna is broken up and ingredients are evenly distributed.
  • Lightly season with salt and pepper and stir again.
  • Add additional amounts of ingredients as desired.
  • Spread salad on bread.

1 (5 ounce) can albacore tuna
2 tablespoons low-fat mayonnaise
1 tablespoon bottled lemon juice
1 teaspoon instant minced onion
1/4 cup craisins

Steps:

  • add lemon juice to cranberries in a separate bowl.
  • mix tuna with mayonnaise and minced onion.
  • add the cranberries & lemon to the tuna mixture (it's best if you can let this set a while before eating).
  • this can be made with fresh lemon juice and fresh onions. if you use dried unsweetened cranberries then add a bit of sugar to the mixture.

1/2 cup mayonnaise (or more)
4 tablespoons celery, chopped

1/4 cup colby-monterey jack cheese, finely shredded
1/4 teaspoon minced garlic
salt and pepper, to taste
6 9-inch spinach tortillas or 6 sun-dried tomato tortillas

Steps:

  • Mix all ingredients.
  • Put a tablespoon or two in the center of a tortilla. Fold bottom up, midpoint. Repeat with the top and then fold/roll in the sides.

2 ( 5oz) cans tuna
2 tablespoons of Miracle Whip (or if you prefer mayonnaise)
3 tablespoons Craisins
1 1/2 tablespoon chopped walnuts
1/8 teaspoon garlic salt
1/8 teaspoon garlic powder
2-3 larger apples (I used Gala)

Steps:

  • Rinse and drain tuna from can.
  • In a bowl combine, tuna, Miracle Whip, Craisens, walnuts, garlic salt and garlic powder until well combined.
  • Cut up your favorite kind of apple (I used Gala) into thin slices.
  • Place a spoonful of the salad onto the apple and spread it around a little bit.
  • Enjoy!

My husband and I enjoy this Cranberry Tuna Salad Sandwich. The tuna mixture is also delicious on Ritz Crackers, or Keebler Club Crackers.

1 (5 oz.) can tuna packed in water, drained
1/4 cup thinly sliced celery
1 egg, hard boiled, peeled & chopped
1/3 cup dried sweetened cranberries
1/3 cup hellmann's mayonnaise
4 slices bread, toasted

Steps:

  • 1. In a bowl combine together, the tuna, celery, chopped hard boiled egg, sweetened cranberries, and the mayonnaise.
  • 2. Spread the tuna salad mixture on 2 slices of toasted bread.
  • 3. Top each with the remaining slices of the toasted bread, and serve immediately.
  • 4. Note: This also tastes great served on crackers, such as, Keebler Club Crackers.

Tips:

  • Make sure to use fresh, ripe cranberries. Frozen cranberries can also be used, but they should be thawed before using.
  • If you don't have celery, you can use thinly sliced cucumber or red onion instead.
