Time 40m

Yield 6-8 serving(s)

Number Of Ingredients 8

2 cups cranberries
1/2 cup sugar
1/2 cup nuts
2 eggs
1 1/2 cups sugar
1 cup flour
3/4 cup melted margarine (11/2 sticks)
1 teaspoon almond extract

Steps:

  • Pour cranberries in a 10" type pie plate(deep dish).
  • Pour sugar(1/2c)over the cranberries, then the nuts.
  • Mix remaining ingredients
  • Pour over mixture in pan.
  • Bake at 350 until top is lightly brown (30-40 min).

Tips:

  • Prep Ahead: For convenience, chop the celery and walnuts and segment the oranges and grapefruit the day before. Store them separately in airtight containers in the fridge.
  • Choose Fresh Cranberries: Fresh cranberries are available from September to December. Look for plump, firm berries that are deep red in color. Avoid any berries that are soft, bruised, or have mold.
  • Use Ripe Oranges and Grapefruits: The sweeter the citrus fruits, the better the salad will taste. Choose oranges and grapefruits that are heavy for their size and have smooth, unblemished skin.
  • Make Your Own Whipped Cream: Freshly whipped cream adds a light and fluffy touch to the salad. To make your own, beat heavy cream with a whisk or electric mixer until soft peaks form.
  • Garnish Elegantly: Before serving, sprinkle some chopped walnuts and a few fresh cranberries on top of the salad for a festive touch.

Conclusion:

This Cranberry Surprise Salad is a delightful combination of sweet, tart, and crunchy flavors. The creamy whipped cream topping adds a touch of luxury, making it perfect for special occasions.
