12 ounces fresh cranberries
1/2 cup granulated sugar (or up to 3/4 cup to taste)
1-2 jalapenos (seeds and stems removed, roughly chopped (I usually just use one))
1/2 cup cilantro leaves (about 1 small bunch)
4 green onions
2 Tablespoons fresh lime juice
Pinch of salt
16 ounces cream cheese, softened
Crackers or chips (for serving)

Steps:

  • Add all ingredients except cream cheese and crackers to the bowl of a large food processor and pulse 20-30 times until finely chopped. Let sit in the fridge for at least 30 minutes.
  • Unwrap the cream cheese and place on a serving plate or bowl. Top with the cranberry salsa and serve with crackers or chips.

12 ounces fresh cranberries
3/4 cup granulated sugar ((add more to taste))
1 jalapeno (, seeded and chopped coarsely (leave the seeds in if you like it spicy))
1/2 cup cilantro
4 green onions
2 tablespoons lime juice
pinch of salt
2 8 ounce blocks of cream cheese

Steps:

  • Place all of the ingredients in a food processor (EXCEPT CREAM CHEESE) and pulse until desired consistency. I like mine fairly fine. Chill in the fridge for a couple of hours (preferably overnight) to allow the salsa to macerate. Serve over cream cheese and with crackers.
  • This makes enough to cover two blocks of cream cheese. Some people prefer to spread the cream cheese on a serving dish with the salsa on top. I prefer to just pour it on top of a block of cream cheese.
  • Depending on how tart your cranberries are you may want to add more sugar. This last batch I added a total of 1 cup of sugar.

1/4 cup sliced green onions
2 jalapeños (minced)
1/4 cup fresh cilantro leaves (minced)
2 tablespoons finely grated fresh ginger
2 tablespoons lemon juice

  • Rinse, drain, and pick over cranberries, (discarding all that are soft or bruised). Place cranberries in a food processor or blender; pulse until finely chopped but not mushy.
  • Place crushed cranberries in a bowl; mix together with green onions, jalapeños, cilantro leaves, and ginger. Pour lemon juice and sugar over and stir together.

3 c fresh or frozen cranberries
1/4 c green onions, minced
1/4 c fresh cilantro leaves, minced
1/4 c bell pepper, chopped (i used red)
1 Tbsp chipotle flakes (or chopped fresh jalapeno peppers)
zest and juice of 1 lime
1 Tbsp finely grated fresh ginger
1 c sugar
1/2 c rotel tomatoes
salt and pepper to taste (i used kosher salt and cayenne pepper)
2 or 3 8-ounce blocks of cream cheese (you can easily use 3 blocks of cream cheese)
crackers and/or chips

Steps:

  • 1. Rinse, drain, and pick over cranberries, discarding any that are soft or bruised. Place them in a food processor along with green onion, cilantro, bell pepper, and zest & juice of lime; pulse until finely chopped but not mushy.
  • 2. Place the cranberry in a bowl; mix together with sugar, ginger and rotel tomatoes. Add salt and pepper to taste. Cover with plastic wrap and refrigerate at least 4 hours so flavors merge. Don't skip this step, fresh cranberries are tart and bitter. This time is needed to merge the flavors.
  • 3. Bring cream cheese to room temperature before serving. Place cream cheese bricks on serving dish; cover with the dip. Garnish, if desired, and served with crackers and/or chips.
