2 (0.3 ounce) packages sugar-free cherry flavored Jell-O® mix
2 cups boiling water
1 (16 ounce) can jellied cranberry sauce
1 (20 ounce) can crushed pineapple, drained
½ cup chopped pecans

Steps:

  • Combine the gelatin and boiling water; stir until gelatin is dissolved. Mix in cranberry sauce and pineapple.

This crunchy cranberry salad is a riff on the traditional Thanksgiving staple.

4 cups fresh or frozen cranberries (14 oz.)
¾ cup packed light brown sugar
½ cup fresh orange juice (from 2 oranges)
1 cup peeled and chopped Bartlett pears (about 2 small pears)
1 cup chopped fresh pineapple (from 1 pineapple)
½ cup thinly sliced celery (from 2 stalks)
½ cup chopped toasted pecans

Steps:

  • Bring the cranberries, brown sugar, and orange juice to a boil in a large saucepan over medium-high, stirring often. Reduce heat to medium-low, and simmer, stirring occasionally, until cranberries pop and mixture thickens, 12 to 15 minutes. Remove from heat, and cool to room temperature, about 30 minutes.
  • Stir in the Bartlett pears, pineapple, celery, and pecans. Transfer to a serving bowl; cover and chill salad 4 to 24 hours.

1 (20 ounce) can crushed pineapple
1 navel orange (peel still intact)
2 cups walnuts
2 (3 ounce) packages cherry gelatin

Steps:

  • Using a food processor, grind cranberries, orange and peel of orange, and walnuts till coarse.
  • In large mixing bowl mix together cranberries, walnuts, orange and pineapple.
  • Place in refrigerator for at least 3 hours.
  • Two hours before mix is chilled make cherry Jell-O according to package directions.
  • Fold Jell-O into the cranberry mixture.
  • Chill till dinner is ready or best chilled overnight.

1 cup hot water
1/2 cup cold water
1/2 pound cranberries
3 apples
2 oranges or 1/2 cup crushed pineapple
1/4 cup nuts, chopped
3/4 cup sugar
4 cups salad greens

Steps:

  • Dissolve gelatin in hot water, then add cold water. Cool mixture and set aside.
  • Wash and grind cranberries. Pare and chop apples (and oranges, if using) into small chunks.
  • Stir together the ground cranberries, chopped apples and oranges (or pineapple) nuts, and sugar.
  • Add to slightly thickened gelatin mixture; then pour into a mold and chill until salad is firm and holds its shape. Unmold onto salad greens.

2 cups cranberries
2/3 cup water
1 cup sugar
1 cup chopped pecans
3 large bananas, chopped
28 ounces fruit cocktail in light syrup, drained
1 pint whipping cream
1/2 teaspoon vanilla
6 tablespoons sugar

Steps:

  • The day before serving, cook cranberries in water over low heat until soft.
  • Add sugar and mash.
  • Add chopped nuts.
  • Stir, cover and refrigerate overnight.
  • About 4 hours before serving, add the fruit cocktail.
  • Just before serving, whip cream, add sugar and vanilla and whip until soft peaks form.
  • Add bananas to fruit mixture.
  • Gently fold whipped cream into fruit mixture until well blended.
  • Serve immediately.
  • Note: You can use Cool Whip instead of whipping the cream, but the flavor is so much better with the real thing!
