WILD RICE, CRANBERRY AND WALNUT SALAD
Wild rice is actually the seed of an aquatic grass, native to North America. High in protein and carbohydrates and low in fat, it has a distinctive nutty taste and dark brown colour, and is often added to rice mixes for visual appeal and flavour. To cook rice in the microwave, place rice in a microwave-safe bowl with 2 cups of hot water. Microwave on high (100%) for 11 to 14 minutes or until liquid has mostly evaporated. Stir rice with a fork to separate grains.

Tips:
- Use fresh cranberries. Fresh cranberries have a tart, tangy flavor that is perfect for this salad. If you can't find fresh cranberries, you can use frozen cranberries, but be sure to thaw them before using.
- Don't overcook the rice. Rice should be cooked until it is tender, but not mushy. If you overcook the rice, it will become gummy and the salad will not be as good.
- Let the salad cool before serving. This will allow the flavors to meld and the salad to firm up.
- Serve the salad with a dollop of yogurt or sour cream. This will add a creamy richness to the salad and help to balance out the tartness of the cranberries.
Conclusion:
Cranberry rice salad is a delicious and easy-to-make dish that is perfect for any occasion. It is a great way to use up leftover rice and cranberries, and it is also a healthy and refreshing option. This salad is sure to be a hit with your family and friends.
