1/3 cup unsalted butter (, softened)
1 cup sugar
1 teaspoon vanilla extract
2 large eggs
1 1/2 cups flour
1 teaspoon baking powder
1/2 teaspoon salt
3/4 cups whole milk
12 ounces fresh cranberries (, (frozen okay too))

Steps:

  • Preheat the oven to 350 degrees and butter and flour an 8x4 inch loaf pan.
  • In a stand mixer cream your butter and sugar until light and fluffy, about 2-3 minutes then add in the vanilla and eggs until fully combined.
  • In a separate bowl sift together the flour and baking powder before adding it into the stand mixer on low speed, alternating with the milk until just combined.
  • Stir the cranberries in by hand until just combined and pour into the pan and bake for 60 minutes until a toothpick comes out clean.

1/3 cup sugar
1 package (1/4 ounce) quick-rise yeast
1/2 teaspoon salt
3 to 3-1/2 cups all-purpose flour
1/2 cup water
1/2 cup 2% milk
1/3 cup butter, cubed
FILLING:
1 cup chopped fresh or frozen cranberries
1/4 cup packed brown sugar
1/4 cup water
1 tablespoon butter
1 tablespoon lemon juice
1/2 cup chopped walnuts, optional
TOPPING:
2 tablespoons all-purpose flour
2 tablespoons sugar
2 tablespoons cold butter, divided
GLAZE (optional):
1/2 cup confectioners' sugar
2 teaspoons 2% milk

Steps:

  • In a large bowl, mix sugar, yeast, salt and 1 cup flour. In a small saucepan, heat water, milk and butter to 120°-130°. Add to dry ingredients; beat on medium speed 2 minutes. Stir in enough remaining flour to form a soft dough., Turn onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease the top. Cover and let rise in a warm place until doubled, about 1 hour., Meanwhile, in a small saucepan, combine cranberries, brown sugar and water. Cook over medium heat until cranberries are soft, about 15 minutes. Remove from heat; stir in butter, lemon juice and, if desired, walnuts. Cool., Punch down dough. Turn onto a lightly floured surface; roll into a 20x10-in. rectangle. Spread filling to within 1/2 in. of edges. Roll up jelly-roll style, starting with a long side; pinch seam to seal. Transfer to a greased 9x5-in. loaf pan, arranging in a slight zigzag fashion to fit., For topping, in a small bowl, combine flour and sugar; cut in 1 tablespoon butter until crumbly. Melt remaining butter; brush over dough. Sprinkle with crumb mixture. Cover with a towel; let rise in a warm place until doubled, about 40 minutes. Preheat oven to 350°., Bake until golden brown and dough is cooked through, 40-45 minutes. Carefully remove from pan to a wire rack to cool. 1 2/3 cups sugar
2/3 cup vegetable oil
1/2 cup milk
2 teaspoons grated lemons or 2 teaspoons grated orange rind
2 teaspoons vanilla
4 eggs
3 cups all-purpose flour
1/2 cup coarsely chopped walnuts or 1/2 cup coarsely chopped pecans
4 teaspoons baking powder
1 teaspoon salt

Steps:

  • Heat oven to 350º.
  • Grease bottoms only of 2 loaf pans, 8 1/2 × 4 1/2 × 2 1/2 inches or 9 × 5 × 3 inches.
  • Mix cranberries, sugar, oil, milk, lemon peel, vanilla and eggs in large bowl.
  • Stir in remaining ingredients.
  • Pour into pans.
  • Bake 50 to 60 minutes or until toothpick inserted in center comes out clean.

1 3/4 c all-purpose flour
3/4 tsp baking soda
1 1/4 tsp cream of tartar
1/2 tsp salt
1/3 c shortening
2/3 c white sugar
2 eggs
1 c mashed banana
1 c whole berry cranberry sauce
1/2 c nuts, chopped (I used walnuts, but, your choice)

Steps:

  • 1. Set oven at 350 degrees. Combine the first 4 ingredients together in a bowl. Mix well. Set aside.
  • 2. Cream shortening and sugar in a bowl. Add the two eggs and mix well. Alternately, fold in the dry ingredients, banana, and cranberries, ending with cranberries. Last, fold in the nuts.
  • 3. Bake in a prepared loaf pan for 1 hour. Don't overbake.
  • 4. I can hardly wait to get it out of the pan before cutting into it and then slathering it with butter! It cuts cleaner and thinner if you can wait until it is completely cool.

2-1/2 to 3 cups all-purpose flour
2 tablespoons sugar
1 package (1/4 ounce) active dry yeast
1/2 teaspoon salt
1/2 cup 2% milk
1/4 cup water
2 tablespoons butter
1 large egg, room temperature
FILLING:
1/2 cup chopped fresh or frozen cranberries, thawed
1/2 cup packed brown sugar
2 tablespoons chopped pecans
1/2 teaspoon grated orange zest
1/4 teaspoon ground nutmeg
GLAZE:
3/4 cup confectioners' sugar
2 to 3 tablespoons orange juice
