2 lb white chocolate-flavored candy coating, coarsely chopped
1 1/2 cups dried cranberries or cherries
1 1/2 cups salted pistachio nuts
1 teaspoon grated orange peel

Steps:

  • Spray cookie sheet with cooking spray; line with waxed paper. In large microwavable bowl, microwave candy coating on Medium (50%) 1 minute; stir. Microwave 1 minute longer, stirring after 30 seconds, or until smooth.

1/4 cup canola oil
2 large eggs
2 teaspoons vanilla extract
1 teaspoon almond extract
1-3/4 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt

1/2 cup dried cranberries

Steps:

  • In a small bowl, beat sugar and oil until blended. Beat in eggs, then extracts. Combine the flour, baking powder and salt; gradually add to sugar mixture and mix well (dough will be stiff). 2 tablespoons all-purpose flour
1/2 teaspoon baking powder
1 large egg
1 large egg white
1 teaspoon freshly grated orange zest
1/4 cup orange juice
9. 2 cups cranberries, fresh or frozen, thawed, coarsely chopped (see Tip)
1/3 cup pistachios, preferably unsalted, chopped and toasted (see Tip)
