FRESH CRANBERRY UPSIDE-DOWN CAKE

Fresh Cranberry Upside-Down Cake image

Amazingly good cranberry upside-down cake - the first time I made it, I forgot the part where you add the egg whites and it still came out good. But much better with the egg whites. My friend gave this recipe to me and I had it for a while, then I saw a bunch of fresh cranberries on sale so I decided to make it.

Tips:

  • Use a cast iron skillet or ovenproof pan: This will help the cake to cook evenly and give it a crispy, golden crust.
  • Make sure the pineapple rings are evenly distributed in the bottom of the pan: This will ensure that each piece of cake is topped with a pineapple ring.
  • Don't overmix the batter: Overmixing can lead to a tough, dense cake. Mix just until the ingredients are combined.
