I make these every year for Christmas...the cranberries give them a festive look. Excellent flavor! These tarts freeze well too!

Time 40m

Yield 24 "3 inch tarts"

Number Of Ingredients 8

3 eggs
1 cup corn syrup
1 cup granulated sugar
2 tablespoons butter, melted
1 teaspoon vanilla
1 cup coarsely chopped pecans
2/3 cup chopped cranberries
24 frozen 3-inch tart shells, thawed

Steps:

  • In medium bowl, beat eggs LIGHTLY with a fork.
  • Add corn syrup, sugar, melted butter and vanilla.
  • Stir until blended.
  • Divide nuts and cranberries evenly among tart shells.
  • Pour in filling until shells are 2/3 full.
  • Bake in preheated 350F (180C) degree oven for 20 to 25 minutes or just until set and golden.
  • Hint: if you have a 3 or 4 cup measuring cup, pour the filling into this and then fill up the tart shells.
  • Much easier.

Tips:

  • To achieve the perfect flaky crust, use a combination of butter and shortening. The butter will add flavor, while the shortening will help keep the dough tender and prevent it from becoming too tough.
  • To prevent the filling from curdling, make sure to whisk the eggs and sugar together thoroughly before adding them to the hot butter mixture.
  • Don't overfill the tart shells. The filling will expand slightly during baking, so it's important to leave a little bit of space at the top of each tart.
  • Bake the tarts until the filling is set and the crust is golden brown. The filling should be slightly jiggly in the center when you shake the pan gently.
  • Allow the tarts to cool completely before serving. This will help the filling to firm up and the crust to become flaky.

Conclusion:

Cranberry pecan butter tarts are a delicious and festive treat that are perfect for any occasion. With their sweet and tangy filling and flaky crust, these tarts are sure to be a hit with everyone. So next time you're looking for a special dessert, give this recipe a try. You won't be disappointed!
