For the streusel topping:
1 cup oats
3/4 cup white rice flour
1 cup brown sugar, well packed
1 cup chopped nuts (optional)
1/2 cup melted unsalted butter
Pinch of ground cinnamon
For the cake:
1 pound (grapefruit-size portion) Apple Cider Brioche
Unsalted butter, for greasing the pan
2 small apples (1 tart and 1 sweet), thinly sliced
1 pear, thinly sliced
3 tablespoons brown sugar
Grated zest of half an orange
1 1/2 cups streusel topping (above)

Steps:

  • Prepare the topping:
  • Combine all streusel ingredients in a bowl and mix until the butter is incorporated. Do not overmix-you want a crumbly texture. Set aside.
  • Assemble the cake:
  • Grease an 8- inch round spring-form pan with butter. Set aside.
  • Toss the apples, pear, brown sugar, and zest together in a small bowl and set aside.
