Time 3h10m

Number Of Ingredients 8

6 oz Cherry Jello
2 cups boiling water
2 cups cranberries ((fresh or thawed))
1 medium orange (zest and segments)
1 cup sugar
2 stalks celery (chopped)

Steps:

  • Dissolve jello in hot water, right in the pan. I use a glass 8x 8", and stir completely until clear.
  • Pulse the cranberries, orange segments, zest, sugar, celery and nuts several times in a food processor. Keep in mind this can be left chunky, but small. Do not over process until smooth!
  • Pour mixture into liquid jello pan and stir to mix thoroughly.
  • Cover with plastic wrap and refrigerate. After 1 hour stir the jello to mix it up, recover and refrigerate until set. Stir thoroughly to break it up prior to serving.

CRANBERRY-ORANGE RELISH

Cranberry-Orange Relish image

This sweet and tart cranberry relish is much more refreshing than cooked cranberry sauce, and it takes about as long to make as it does to open a can. You'll need a food processor for this one; a blender will reduce everything to juice. Leftovers are great for breakfast with plain yogurt.

Time 5m

Yield 8 servings

Number Of Ingredients 4

1 bag fresh cranberries
1 whole navel orange, skin included, washed and cut into chunks
1/2 cup shelled pecans
1/3 cup mild honey, such as clover

Steps:

  • Place all the ingredients in a food processor and pulse, then blend until you have a uniform, very finely chopped mixture with a crunchy texture. Chill until ready to serve.

Tips:

  • Use fresh cranberries. Fresh cranberries have a slightly tart flavor that pairs well with the sweet orange and cherry Jell-O.
  • Don't overcook the cranberries. Overcooked cranberries will become mushy and lose their tart flavor.
  • Use a sharp knife to slice the oranges. This will help prevent the oranges from tearing.
  • Reserve half of the cherry Jell-O mix. This will help give the relish the perfect consistency.
  • Chill the relish before serving. This will help the Jell-O to set and the flavors to meld together.

Conclusion:

Cranberry-Orange Relish in Cherry Jell-O is a delicious and festive side dish that is perfect for any holiday meal. It is easy to make and can be made ahead of time. Enjoy the perfect balance of tart and sweet flavors!
