Steps:
- Preheat the oven to 350 degrees F. Grease and flour a bundt pan.
- Mix together the orange zest and juice, orange liqueur and eggs in a large bowl and set aside. In a smaller bowl, toss the cranberries with 1 tablespoon of the flour and set aside.
- In a stand mixer with a paddle attachment, add the sugar, baking powder, salt, baking soda and remaining 2 1/2 cups flour and mix to combine. On low speed, slowly add the butter 1 tablespoon at a time and continue to mix until a pea-sized crumble texture is achieved. Turn the speed to medium and slowly stream in the egg/orange mixture until combined. Increase the speed to medium high and beat until light and fluffy, about 2 minutes. Gently fold in the cranberry mixture. Pour the batter into the prepared bundt pan and smooth out the top.
- Bake until a cake tester inserted in the cake comes out clean, 50 to 55 minutes. Let cool in the pan for 20 to 30 minutes, then remove the cake and serve.
Tips:
- For a richer flavor, use dark chocolate chips instead of semi-sweet chocolate chips.
- If you don't have buttermilk, you can make your own by adding 1 tablespoon of lemon juice or vinegar to 1 cup of regular milk. Let it sit for 5 minutes before using.
- To make sure the coffee cake is evenly cooked, insert a toothpick into the center. If it comes out clean, the cake is done.
- For a crispy topping, sprinkle the cake with a mixture of brown sugar and cinnamon before baking.
- If you don't have a bundt pan, you can bake the cake in a 9x13 inch baking pan.
- To make the cake ahead of time, bake it according to the recipe instructions and then let it cool completely. Wrap it tightly in plastic wrap and store it in the refrigerator for up to 3 days. When you're ready to serve, let it come to room temperature for about an hour or reheat it in a preheated 350 degree Fahrenheit oven for about 15 minutes.
Conclusion:
This cranberry orange nut coffee cake is a delicious and easy-to-make treat that is perfect for any occasion. The moist and flavorful cake is filled with tart cranberries, sweet oranges, and crunchy walnuts. The streusel topping adds a delightful crunch and sweetness to the cake. Whether you're serving it for breakfast, brunch, or dessert, this coffee cake is sure to be a hit.
