These cranberry-orange muffins are not overly sweet, and big on flavor. Lots of tart cranberries and sweet orange juice/zest kick the flavor up. Best when made with fresh cranberries, fresh orange juice, and lots of pulp! My family loves them without the glaze, but some of my sweet-toothed friends prefer it with, as the muffins are only slightly sweet on their own.

1 teaspoon baking powder
½ teaspoon baking soda

1 ⅓ cups fresh cranberries

1 tablespoon orange juice, or more as needed

1 cup toasted whole skin-on almonds
1 box yellow cake mix for two 9-inch rounds
1/2 cup plain whole milk yogurt
2 large eggs
1/3 cup vegetable oil
3/4 teaspoon zest and 2 tablespoons juice from 1 orange
1 cup dried cranberries
1 cup confectioners' sugar
2 1/2 tablespoons hot water

Steps:

  • Preheat the oven to 350 degrees F. Lightly coat the top and inside cups of a 12-cup muffin pan with nonstick cooking spray.
  • Put 1/4 cup almonds in the bowl of a food processor. Process until very fine and the nuts are the texture of cornmeal. Add the cake mix, yogurt, eggs, oil, 1/4 cup water and the remaining 3/4 cup whole almonds. Pulse until no bits of dry cake mix remain and the nuts are coarsely chopped Add 1/4 teaspoon of zest and the orange juice to the batter with the cranberries. 2 cups flour

1 1/2 teaspoons baking powder
1/2 teaspoon baking soda

Juice and grated rind of one orange
2 tablespoons melted butter
Boiling water
1 egg
1/4 cup milk
1 cup chopped cranberries
Flour and butter to grease muffin tins

Steps:

  • Preheat the oven to 350 degrees. Spread the pecan halves on a cookie sheet and place in the oven to toast gently while you proceed with the recipe.
  • Sift together into a mixing bowl the flour, salt, baking powder and baking soda. Add the sugar and stir gently to mix.
  • Place the orange juice and grated rind in a Pyrex or other heatproof measuring cup that holds at least one cup. Add the melted butter and enough boiling water to make three-quarters of a cup of liquid.
  • In a small bowl, beat the egg with a fork. Add the hot liquid to the egg, beating continuously to mix well.
  • Add the liquid mixture to the dry ingredients. Add the milk and stir with a spoon to mix. Remove the pecan halves from the oven, and when cool enough to handle, chop them coarsely. You should have approximately one cup. Add the pecans to the muffin mixture. Add the roughly chopped cranberries.
  • Grease and flour muffin tins. Fill each one no more than two-thirds full. Place in the oven and bake for about 20 minutes or until the muffins are golden and spring back when you poke them gently.

1 cup cranberries, coarsely chopped
1 cup walnuts, chopped (about 4 ounces)

1 egg
1 teaspoon sugar

Steps:

  • Preheat oven to 400 degrees F. arranging a rack in the center of the oven. Generously grease 12 muffin cups. Remove zest from the oranges. Mince the zest and measure out 1 tablespoon plus 1 teaspoon. Squeeze the juice from the oranges and reserve 2/3 cup.
  • In a medium bowl, toss together the cranberries, nuts and reserved orange zest. In a large bowl, combine the flour, baking powder and the 2/3 cup sugar and whisk together.
  • In a medium bowl, combine the reserved orange juice, melted butter and egg. Whisk until blended. Pour the liquid over the flour mixture and stir lightly 3 or 4 times with a rubber spatula, to combine. Add the cranberry-nut mixture and distribute evenly, using as few strokes as possible (the batter will not be perfectly smooth).
  • Quickly divide the batter among the prepared muffin cups. Sprinkle a pinch of the 1 teaspoon sugar over the top of each muffin. Bake 25 minutes in preheated oven or until golden. Let muffins rest in pan for about 2 minutes. Using a blunt knife, ease the muffins out onto a wire rack and let cool 15-20 minutes.

Steps:

  • Preheat the oven to 400°F
  • Line 12 muffin cups with paper liners or spray generously with nonstick cooking spray. Grease the top of the muffin pan.
  • For the streusel, mix all the ingredients together with a fork or your fingertips in a small bowl to make a crumbly mixture. Set aside.
  • For the batter, whisk the oil, brown sugar, zest, and egg together in a large bowl. The mixture should be pasty.

2 1/2 cups water
1 1/2 teaspoons baking powder
1 (15 ounce) box krusteaz fat-free orange cranberry muffin mix

Steps:

  • (Krusteaz mixes are on the cake mix aisle, the 15 oz is approx, I do not have a box on hand and just guessed for the recipe).
  • Soak the All Bran Cereal in the water for 5 minutes.
  • Spray muffin tins with Pam.
  • Add the baking powder and the muffin mix to the cereal and mix well.
  • Batter will be thick.
  • Drain the can of cranberries and add the berries to the mix.
  • Drop into muffin tins.
  • Bake at 400 degrees for 16-18 minutes or until toothpick inserted in center comes out clean.
  • (Use ONLY the FAT FREE Krusteaz mixes with this recipe- for some reason the regular mixes dont taste as well- they have the orange cranberry, Apple Cinnamon and Blueberry- the blueberry is just as good as the orange cranberry, I have not tried apple cinnam).

  • Grease bottoms of jumbo muffin pan with vegetable shortening.

2 cups all-purpose flour

1 teaspoon salt
0.5 (12 ounce) package fresh cranberries
1 cup sugar
1/4 cup butter, softened
1 large egg, lightly beaten
3/4 cup orange juice
24 aluminum foil, miniature baking cups
vegetable oil cooking spray
1 (3 ounce) package softened cream cheese
1 tablespoon orange juice
1/4 teaspoon vanilla
1 1/2 cups sifted powdered sugar

Steps:

  • Preheat oven to 350 degrees.
  • Bake pecans in a single layer in a shallow pan 8-10 minutes or until toasted and fragrant, stirring occasionally,.
  • Whisk together flour, baking powder, and salt.
  • Pulse cranberries and sugar in a food processor 3-4 times or just until chopped.
  • Beat butter at medium speed with an electric mixer until creamy. Add eggs, beating until well blended. Gradually add flour mixture alternately with orange juice, beginning and ending with flour mixture. Beat at low speed until blended after each addition. Stir in cranberry mixture and pecans.
  • Place baking cups in miniature muffin pans; coat with cooking spray. Spoon batter into baking cups, filling completely.
  • Bake for 25 minutes or until a wooden pick inserted in center of muffin comes out clean. Remove from pans to a wire rack. Spoon Orange Cream Cheese Glaze over warm muffins.
  • Orange Cream Cheese Glaze: Beat one 3 oz. package of softened cream cheese at medium speed until creamy. Add 1 tablespoons orange juice and 1/4 tsp of vanilla; beat until smooth. Gradually add 1 1/2 cup sifted powdered sugar, beating until smooth.

This is my daughter's favorite muffin recipe. I am about to whip up some for her now. I kind of like them myself and the fact that I can use the orange marmalade instead of orange zest.

2 1/2 c all purpose flour
1/4 c granulated sugar
1/4 c light brown sugar
2 1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
1/4 tsp ground allspice
1 c butter milk
1/2 c orange marmalade
5 Tbsp melted butter
1 large egg
1 c chopped cranberries
1/2 c chopped walnuts

Steps:

  • 1. Grease 12 muffin cups or line with paper muffin liners.
  • 2. In a large mixing bowl, mix together flour, sugars, baking powder, baking soda, salt, cinnamon, nutmeg, and allspice. Make a well in the center.
  • 3. In a separate bowl, whisk together buttermilk, marmalade, melted (cooled) butter, and egg. Pour into well in the center of the dry ingredients. Mix with a fork until dry ingredients are moistened. Stir in chopped cranberries (I chop mine in the food processor)and walnuts.
  • 4. Use an ice cream scoop and spoon batter into muffin cups, filling 2/3 full. Bake in a pre heated oven at 400 degrees F. until tops are firm and lightly browned, about 20 minutes.
  • 5. Cool muffins in pan on a rack for 5 minutes; turn out of pan to completely cool.

1/4 cup whole milk

1 cup thawed and well drained frozen cranberries or 1 cup fresh cranberries

Steps:

  • Set oven to 400°F.
  • Line muffin cups with paper baking cups.
  • In a bowl, blend together melted butter and brown sugar using a wooden spoon.
  • Whisk in eggs, one at a time.
  • Stir in vanilla, milk and orange juice.
  • In another bowl, combine the flours, orange peel, baking powder, cinnamon and salt.
  • Make a well in the dry ingredients, and pour in orange juice/milk mixture.
  • Blend JUST until combined.
  • Gently stir in cranberries.
  • Divide batter between prepared muffin tins.
  • Bake for 22-25 minutes, or until muffins test done.
  • Turn out on a cooling rack.
  • Note: These muffins freeze beautifully.

An adjusted recipe for a muffin booklet sent to me by TOH. The original recipe called for raisins but I really prefer the taste of dried cranberries instead. I love the intensity of the orange flavor through the muffin.

1 medium navel orange
1/2 cup orange juice
1/2 cup butter, melted
1 egg
1 1/2 cups all-purpose flour
3/4 cup sugar
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1/2 cup dried cranberries

Steps:

  • Peel orange and place peel in a blender or food processor. Separate the orange into segments and place those in the blender too.
  • Add the orange juice to the blender and process until well blended.
  • Add the butter and egg and blend again until just blended.
  • In a large bowl, combine the flour, sugar, baking powder, baking soda and salt.
  • Stir in the orange mixture into the dry ingredients just until moistened (do not overmix).
  • Fold in the dried cranberries.
  • Fill greased or lined muffin cups two-thirds full.
  • Bake at 400 F for 15-20 minutes.
  • Cool 5 minutes in tin before removing to a wire rack to cool completely.
