Yield 48

Number Of Ingredients 14

1 cup butter, softened
1 cup white sugar
½ cup packed brown sugar
1 egg
1 teaspoon grated orange zest
2 tablespoons orange juice
2 ½ cups all-purpose flour
½ teaspoon baking soda
½ teaspoon salt
2 cups chopped cranberries
½ cup chopped walnuts
½ teaspoon grated orange zest
3 tablespoons orange juice
1 ½ cups confectioners' sugar

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • In a large bowl, cream together the butter, white sugar and brown sugar until smooth. Beat in the egg until well blended. Mix in 1 teaspoon orange zest and 2 tablespoons orange juice. Combine the flour, baking soda and salt; stir into the orange mixture. Mix in cranberries and if using, walnuts, until evenly distributed. Drop dough by rounded tablespoonfuls onto ungreased cookie sheets. Cookies should be spaced at least 2 inches apart.
  • Bake for 12 to 14 minutes in the preheated oven, until the edges are golden. Remove from cookie sheets to cool on wire racks.

Tips:

  • Use fresh cranberries for the best flavor. Frozen cranberries can also be used, but they should be thawed before using.
  • If you don't have an orange, you can use 1/2 teaspoon of orange extract instead.
  • The dough can be made ahead of time and refrigerated for up to 3 days. When you're ready to bake the cookies, let the dough come to room temperature for about 30 minutes before rolling it out.
  • The cookies can be baked on a parchment paper-lined baking sheet or on a greased baking sheet. If you're using a greased baking sheet, be sure to grease it well so that the cookies don't stick.
  • Bake the cookies until they are just set and the edges are just starting to brown. Overbaking will make the cookies dry and crumbly.
  • Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Conclusion:

These cranberry orange holiday cookies are the perfect treat for any holiday gathering. They're made with fresh cranberries, orange zest, and a hint of cinnamon and nutmeg. The cookies are soft and chewy with a slightly tart flavor from the cranberries and a sweet and citrusy flavor from the orange. They're also easy to make and can be prepared ahead of time. So next time you're looking for a festive and delicious holiday cookie, give these cranberry orange holiday cookies a try!
