2 packets Sweet'N Low® or 1/2 teaspoon Sweet'N Low® 8 oz.
3/4 teaspoon orange extract
pinch kosher salt
1 ounce sugar-free cheesecake pudding mix
1 1/2 cups whole milk
6 ounces cream cheese (room temperature)
1 3/4 teaspoon pure vanilla extract
1 teaspoon orange zest
2 packets Sweet'N Low® or 1/2 teaspoon Sweet'N Low® 8 oz.
1 1/2 cups heavy whipping cream

1 pkg. (6 oz.) JELL-O Cherry Flavor Gelatin
1 can (16 oz.) whole berry cranberry sauce
1-1/2 cups cold water
1/2 tsp. ground cinnamon
1-1/2 cups graham cracker crumbs
1/4 cup sugar, divided
1/2 cup butter or margarine, melted
1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened
1 tub (8 oz.) COOL WHIP Whipped Topping, thawed
1 can (8 oz.) DOLE Crushed Pineapple, drained
1 can (11 oz.) DOLE Mandarin Oranges, drained

Steps:

  • Add boiling water to gelatin mix in large bowl; stir 2 min. until completely dissolved. Add cranberry sauce; stir until melted. Stir in cold water and cinnamon. Refrigerate 1-1/4 hours or until slightly thickened.
  • Meanwhile, mix graham crumbs, 2 Tbsp. sugar and butter; press onto bottom of 13x9-inch dish. Refrigerate until ready to use.

1/2 c butter, room temperature
1 c sugar
1 large egg
1/2 tsp pure vanilla extract
1 tsp rum extract
1/2 c eggnog
1 c dried cranberries
3/4 c chopped pecans
2 c all purpose flour
2 tsp baking powder
1/2 tsp salt
1/8 tsp freshly grated nutmeg
ORANGE DREAM GLAZE
1 1/8 c confectioners' sugar
1 tsp orange extract
1 orange

Steps:

  • 1. Pre heat oven to 350° F.
  • 2. Cream together butter and sugar.
  • 3. Blend in egg, vanilla, rum extract and eggnog.
  • 4. Stir in cranberries and pecans.
  • 5. Sift together flour, baking powder, salt and nutmeg. Stir into eggnog mixture just until incorporated.
  • 6. Scoop rounded teaspoons of dough onto a parchment lined baking sheet. Bake at 350° F. for 10-12 minutes or until lightly golden brown. Remove to a rack to cool completely.
  • 7. Glaze cooled cookies with Orange Dream glaze. (Recipe follows)
  • 8. Orange Dream Glaze: Mix together confectioners sugar, orange extract, the zest of one orange, and enough cold orange juice to make a thick glaze. Drizzle glaze over cookies.

1 package cranberry Jell-O gelatin (8 serving size)
1 (16 ounce) can whole berry cranberry sauce
1 1/2 cups cold water
1 (15 1/2 ounce) can dole mandarin oranges, drained
1 1/2 cups honey maid graham cracker crumbs
1/2 cup sugar, divided
1/2 cup butter or 1/2 cup margarine, melted
1 (8 ounce) package Philadelphia Cream Cheese, softened
2 tablespoons milk
2 (8 ounce) containers Cool Whip Topping, thawed,divided

Steps:

  • STIR boiling water into gelatin in large bowl at least 2 minutes until completely dissolved.
  • Stir in cranberry sauce until melted.
  • Stir in cold water.
  • Refrigerate about 1 1/4 hours or until slightly thickened (consistency of unbeaten eggs whites).
  • Gently stir in mandarin oranges.
