1 1 ⁄2 teaspoons baking powder
1/2 teaspoon salt

1 tablespoon orange zest
3 ⁄4 cup orange juice
1 large egg
1 cup cranberries (chopped (fresh or frozen))
1 cup powdered sugar
1 1/2 tablespoons orange juice

Steps:

  • Preheat oven to 350 degrees. Grease a 9 x 5 pan with non stick cooking spray, set aside.
  • Combine flour, sugar, baking powder, salt and baking soda.
  • Add butter and mix until crumbly.
  • Stir in the zest, juice and egg. Mix until combined.
  • Fold in the cranberries.
  • Pour batter (it will be thick) into the prepared pan and bake for 50-60 minutes or until a toothpick comes out mostly clean.

I came up with this recipe myself. I hope you like it. It isn't as sweet as some quick breads because of the cranberries, but I like the tartness. Let me warn you, though. It smells really good fresh out of the oven, but PLEASE let it sit overnight in the refrigerator before trying it. When it is still warm, but flavors haven't blended and it is extremely tart. The longer it's allowed to sit, the better it gets. We had this for Thanksgiving and I received several compliments on it. Prep time is an estimate. Enjoy!

6 teaspoons baking powder
1 teaspoon salt
1 1/2 cups sugar
2 eggs, beaten
2 cups orange juice

1/2 cup chopped nuts
1/2 cup powdered sugar
2 to 3 teaspoons orange juice

Steps:

  • Heat oven to 375°F. Generously grease bottom of loaf pan, 9x5x3 inches. Stir Bisquick, granulated sugar, sour cream, oil, milk, orange peel and eggs in medium bowl until moistened. Stir in cranberries and nuts. Pour into pan.

HONEY BUTTER
1 stick butter, softened
2 Tbsp honey
1/8 tsp cinnamon

  • 1. Preheat oven to 375. Grease a 9" by 5" metal loaf pan. From orange, grate 1 tsp of peel and squeeze 1/2 cup of juice.
  • 2. In a large bowl, combine flour, sugar, baking powder, baking soda, and salt.
  • 3. In a small bowl, beat orange peel, juice, melted butter, and egg until blended.

2 tablespoons orange-flavored liqueur, if desired

2 teaspoons cornstarch
1/2 cup water
1/2 cup orange marmalade

  • Heat oven to 300°F. Wrap outside of 9- or 10-inch springform pan with foil. In small bowl, stir together cookie crumbs, powdered sugar and butter. Press in bottom of pan.

Cover; refrigerate until serving time.
  • Just before serving, remove side of pan from cheesecake. Spoon cranberry-orange sauce onto cheesecake.
