CRANBERRY SALSA

This Cranberry Salsa with cream cheese is a spicy and sweet combo that is always a hit at parties.

Provided by Christy Denney

Categories     Appetizer

Time 10m

Number Of Ingredients 8

12 ounces fresh cranberries
3/4 cup granulated sugar ((add more to taste))
1 jalapeno (, seeded and chopped coarsely (leave the seeds in if you like it spicy))
1/2 cup cilantro
4 green onions
2 tablespoons lime juice
pinch of salt
2 8 ounce blocks of cream cheese

Steps:

  • Place all of the ingredients in a food processor (EXCEPT CREAM CHEESE) and pulse until desired consistency. I like mine fairly fine. Chill in the fridge for a couple of hours (preferably overnight) to allow the salsa to macerate. Serve over cream cheese and with crackers.
  • This makes enough to cover two blocks of cream cheese. Some people prefer to spread the cream cheese on a serving dish with the salsa on top. I prefer to just pour it on top of a block of cream cheese.
  • Depending on how tart your cranberries are you may want to add more sugar. This last batch I added a total of 1 cup of sugar.

CRANBERRY SAUCE SALSA

Cranberry Sauce Salsa image

Don't toss that little bit of cranberry sauce leftover from Thanksgiving dinner. This recipe, which we developed for a special kids' edition of The New York Times, calls for making it into a savory-sweet salsa that everyone will love. Just add some chopped fresh tomatoes, onion, garlic, cilantro and jalapeño to prepared whole cranberry sauce (not the jellied stuff). Stir in some lime zest and juice, and a sprinkling of chile powder, cumin and cayenne. Serve with enchilada pie or tortilla chips, and consider stocking canned cranberry sauce in your cabinet all year long.

Zest and juice of 1 lime
1 jalapeno, coarsely chopped
1/2 white onion coarsely chopped, covered and microwaved for 1 minute
1/4 cup diced red bell pepper
1/4 cup diced green bell pepper
1/2 cup Mexican-flavored canned tomatoes, drained and chopped
Kosher salt and freshly ground black pepper
Serving suggestion: Serve with Turkey Taquitos, recipe follows.
2 cups plus 1 tablespoon vegetable oil
1/2 white onion, finely chopped
1 clove garlic, minced
1 tablespoon minced jalapeno
1 1/2 cups shredded cooked turkey
1 1/2 cups shredded jack cheese
1/2 cup Mexican-flavored canned tomatoes, drained and chopped
Kosher salt and freshly ground black pepper
18 white or yellow corn tortillas

Steps:

  • Place the cranberry sauce, cilantro, lime zest, lime juice, jalapeno pepper, onion, red pepper, green pepper, tomatoes, and salt, and pepper, to taste in a food processor and pulse until blended, but still chunky. Serve with Turkey Taquitos.
  • Sweat the onion, garlic, and jalapeno in a saute pan with 1 tablespoon of vegetable oil. Remove from the heat and add to a large bowl. To the bowl, add the shredded turkey, cheese, tomatoes and season with salt, and pepper, to taste. Mix the ingredients thoroughly.
  • Warm the tortillas in the microwave for 10 seconds so they are pliable.
  • Fill the tortillas with a tablespoon of filling and roll into a thin taquito, securing with a toothpick. Keep the taquitos covered with a damp towel before cooking otherwise the corn tortillas will dry out and crack. Heat 2 cups oil in a straight-sided pan to 350 degrees F. Place the taquitos in the hot oil in batches and shallow fry until crisp, rolling to cook all sides, about 3 minutes.
  • Drain the taquitos on paper towels and salt. Remove the toothpicks before serving.

CRANBERRY ONION SALSA

Cranberry Onion Salsa image

I found this recipe in the "Taste of Home's 'Quick Cooking'" Magazine - November/December 2005 edition. I have not yet tried it for myself, but I would like to someday soon. Would be good served warm as a condiment for pork or poultry. I hope you enjoy!

Tips:

  • Choose ripe and firm cranberries: Fresh cranberries are available in the fall and winter months. Look for cranberries that are plump, firm, and have a deep red color. Avoid cranberries that are soft, bruised, or have any signs of mold.
  • Use a sharp knife to dice the onion: A sharp knife will help you get a clean, even dice on the onion. If you don't have a sharp knife, you can also use a food processor to chop the onion.
  • Don't overcook the onion: The onion should be cooked until it is softened and translucent, but not browned. If you overcook the onion, it will become mushy and lose its flavor.
  • Use fresh cilantro: Fresh cilantro adds a bright, citrusy flavor to the salsa. If you don't have fresh cilantro, you can substitute dried cilantro, but it won't have the same flavor.
  • Serve the salsa immediately: Cranberry onion salsa is best served fresh. It will keep for a few days in the refrigerator, but the flavors will start to fade after a few days.

Conclusion:

Cranberry onion salsa is a delicious and versatile condiment that can be used to add flavor to a variety of dishes. It is perfect for topping tacos, burritos, enchiladas, and other Mexican dishes. It can also be used as a dip for chips, vegetables, or crackers. The salsa is also a good source of vitamins and minerals, including vitamin C, potassium, and fiber.
