Yield 1 batch

Number Of Ingredients 12

1 cup all-purpose flour
1/2 tsp baking soda
1/4 tsp salt
1 cup butter softened
3/4 cup brown sugar
1/2 cup granulated sugar
2 eggs
1 tsp vanilla
2 tsp orange zest
3 cups quick oats
1 cup white chocolate chips
1 cup dried cranberries

Steps:

  • 1. Preheat oven to 350° 2 In a medium bowl, combine flour, baking soda and salt. 3. Beat butter and both sugars in a large bowl with electric mixer until creamy. Beat in eggs, vanilla, and orange zest. Beat in flour mixture. Stir in oatmeal one cup at a time. Add chocolate chips and dried cranberries. 4. Drop batter by heaping teaspoonfuls, 1 inch apart, onto un-greased cookie sheets. Bake for 10 minutes. Let cool

Tips:

  • Use fresh or frozen cranberries. Fresh cranberries are available in the fall and winter months. If you are using frozen cranberries, thaw them before using.
  • Chop the cranberries finely. This will help them to distribute evenly throughout the oatmeal drops.
  • Use old-fashioned oats. These oats will provide a chewy texture to the oatmeal drops.
  • Do not overmix the batter. Overmixing will result in tough oatmeal drops.
  • Bake the oatmeal drops until they are just set. Overbaking will result in dry oatmeal drops.
  • Let the oatmeal drops cool completely before serving. This will help them to firm up.

Conclusion:

Cranberry Oatmeal Drops are a delicious and healthy snack or breakfast option. They are easy to make and can be customized to your liking. Try adding different nuts, seeds, or dried fruits to the batter. You can also drizzle the oatmeal drops with honey or maple syrup before serving.
