2 teaspoons baking powder

1 cup milk
1 egg
2 teaspoons vanilla
2 tablespoons butter, melted

Steps:

  • To make the pancakes, dump Bisquick mixture and pecans into large bowl, reserving powdered sugar for topping. Add milk, egg, vanilla and butter, and stir until combined. Batter will be a little lumpy.
  • Pour by 1/3 cupfuls onto greased hot skillet. Cook until edges are dry and bubbles appear on the surface, about 3 minutes. Turn, and cook on other side 2 minutes. Repeat with remaining batter.
  • Serve pancakes with generous sprinkling of powdered sugar and, if desired, maple syrup.

Nutrition Facts : ServingSize 1 Serving

Tips:

  • Use fresh or frozen cranberries: Fresh cranberries are best, but frozen cranberries can also be used. If using frozen cranberries, thaw them before using.
  • Don't overmix the batter: Overmixing the batter will make the pancakes tough. Mix just until the ingredients are combined.
  • Cook the pancakes over medium heat: Medium heat will help the pancakes cook evenly without burning.
  • Don't overcrowd the pan: Don't overcrowd the pan with pancakes, or they will not cook evenly.
  • Serve the pancakes warm: Pancakes are best served warm. You can keep them warm in a preheated oven or on a warm plate.
