2 cups fresh or frozen cranberries
¾ cup sugar
2 tablespoons orange zest
1 ½ cups all-purpose flour
1 ½ cups rolled oats
1 cup packed light brown sugar
1 teaspoon baking powder
½ teaspoon salt
¾ cup butter

Steps:

  • In a small saucepan over medium high heat, combine the cranberries, white sugar and orange zest. Bring to a boil, then reduce heat and cook until the mixture has reduced to about 1 cup.
  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x9 inch baking pan, line with foil, then grease the foil.
  • In a medium bowl, stir together the flour, oats, brown sugar, baking powder and salt. Cut in the butter using your hands or a pastry blender until the mixture resembles coarse crumbs. 1 egg
⅓ cup brown sugar
1 teaspoon vanilla extract
1 cup flour
¼ teaspoon baking powder
¼ teaspoon baking soda

¼ teaspoon pumpkin pie spice
¾ cup dried cranberries
¾ cup pecans

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease 11x7 inch baking pan.
  • Pour melted butter into a mixing bowl, and beat in the egg, brown sugar, and vanilla extract. Sift the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and pumpkin pie spice together in a separate mixing bowl. Stir the flour mixture into the butter mixture until thoroughly blended. 1/2 c butter
1/3 c honey
1/4 c packed brown sugar
1 tsp ground cinnamon
1/2 tsp salt
3 c square oat cereal (quaker brown sugar)
1 1/2 c old fashioned oats
1 c chopped walnuts
1/2 c dried cranberries (craisins)
1/2 c chocolate covered raisins

Steps:

  • 1. In a saucepan, combine the first five ingredients; heat until the butter is melted. Stir until the sugar is dissolved.
  • 2. In a large bowl, combine cereal, oats and nuts. Drizzle with the butter mixture and mix well.
  • 3. Place in a greased 10 x15 baking pan. (I use parchment paper instead of greasing the pan) Bake, uncovered, at 275 degrees for 45 minutes, stirring every 15 minutes.
  • 4. Cool completely, stirring occasionally. Stir in cranberries and chocolate covered raisins.
  • 5. Store in an airtight container.
  • 6. ENJOY!

1 cup unsalted butter at room temperature
1 ½ cups light brown sugar
2 teaspoons vanilla extract
2 large eggs
2 cups old-fashioned rolled oats

100g porridge oats
100g light muscovado sugar
100g dried cranberries
100g butter , melted
1 tbsp golden syrup
1large egg , beaten
1 tsp vanilla extract or almond extract

  • Heat oven to 180C/160C fan/gas 4. Line the base of a 20cm square tin with baking parchment.
