CRANBERRY DESSERT CAKE WITH BUTTER SAUCE

Cranberry Dessert Cake With Butter Sauce image

A moist and flavorful fall dessert. The warm butter sauce really compliments the tart cranberries. I have purchased fresh cranberries in season and frozen for use later. The frozen cranberries work well in the recipe.

Time 50m

Yield 12 serving(s)

Number Of Ingredients 12

2 cups all-purpose flour
3 teaspoons baking powder
1 teaspoon salt
3 tablespoons butter, melted
1 cup granulated sugar
2 eggs, beaten
1 cup milk
2 cups fresh cranberries
1 cup butter
2 cups sugar
1 cup cream or 1 cup half-and-half
2 teaspoons vanilla extract

Steps:

  • Preheat oven to 350. Grease a 13-by-9-inch glass baking pan.
  • To make the cake, sift together flour, baking powder and salt in a small bowl. Combine butter and sugar in a large bowl. Beat with a mixer on medium speed until well blended. Add eggs. Add milk alternately with the dry ingredients, starting and ending with dry ingredients. Mix well. Stir in cranberries. Bake 30 minutes or until wooden pick inserted comes out clean.
  • To make the sauce, combine all ingredients in saucepan over medium low and
  • cook 10 minutes or until sugar is melted, stirring frequently. Pour hot over cake.

Tips:

  • Use fresh cranberries for the best flavor. Frozen cranberries can be used, but they will not have the same tartness and brightness as fresh berries.
  • Make sure the butter is cold before creaming it with the sugar. This will help to create a light and fluffy cake.
  • Do not overmix the batter. Overmixing can make the cake tough.
  • Bake the cake until a toothpick inserted into the center comes out clean.
  • Allow the cake to cool completely before frosting it. This will help to prevent the frosting from melting.

Conclusion:

This cranberry molasses cake is a delicious and festive dessert that is perfect for the holiday season. The sweet and tart cranberries are a perfect complement to the rich molasses flavor of the cake. The cake is also very moist and has a light and fluffy texture. The sweet butter sauce is the perfect finishing touch, adding a decadent richness to the cake. This cake is sure to be a hit with your family and friends.
