2 eggs
3/4 cup crushed saltines (about 22 crackers)
1/2 cup whole-berry cranberry sauce
1/4 cup fresh or frozen cranberries, thawed
1/4 cup packed brown sugar
2 tablespoons chopped onion
1-1/2 teaspoons salt
1/8 teaspoon pepper
1-1/2 pounds ground beef
1/2 pound ground ham
1/2 cup barbecue sauce, optional
Bay leaves and fresh cranberries, optional

Steps:

  • In a large bowl, combine the first eight ingredients. Crumble beef and ham over mixture and mix well. Pat into a greased 9x5-in. loaf pan. Bake, uncovered, at 350° for 1-1/4 hours or until a thermometer reads 160°., During the last 15 minutes of baking, baste meat loaf with barbecue sauce if desired. Garnish with bay leaves and cranberries if desired. Discard bay leaves before slicing.

3 eggs
1/2 cup beef broth
1-1/2 cups soft bread crumbs
1 envelope onion soup mix
3 pounds lean ground beef
SAUCE:
1 can (14 ounces) whole-berry cranberry sauce
1 can (14 ounces) sauerkraut, rinsed, drained and chopped
1 bottle (12 ounces) chili sauce
1-1/3 cups water
1/2 cup packed brown sugar

Steps:

  • In a bowl, combine the first four ingredients. Crumble beef over mixture and mix well. Shape into a loaf in a greased 13x9-in. baking dish. In a saucepan, combine sauce ingredients. Bring to a boil; reduce heat. Simmer, uncovered, for 5 minutes. Pour over meat loaf. Bake, uncovered, at 350° for 1-1/4 hours or until the meat is no longer pink and a thermometer reads 160°.

1 can(s) (16 oz.) whole cranberry sauce
2 Tbsp brown sugar
1 lb ground chicken
1 1/2 c soft bread crumbs
1 medium onion, chopped
1/2 medium green bell pepper, chopped
1/3 c milk
1 egg
1/2 tsp salt
1/4 tsp each parsley flakes and thyme leaves
1/8 tsp oregano leaves

Steps:

  • 1. Preheat oven to 375 degrees F. In small bowl stir together cranberry sauce and brown sugar. Set aside.
  • 2. In large bowl combine ground beef, bread crumbs, onion, bell pepper, milk, egg product, salt, parsley, thyme and oregano. In large shallow baking pan, shape meat mixture into a 8x4x2-inch loaf. I baked mine in a loaf pan. Bake, uncovered, for 30 minutes. Spread ¼ cup of reserved cranberry sauce mixture on top of loaf. Bake 20 to 30 minutes more.
  • 3. In small saucepan heat remaining cranberry sauce mixture over low heat until heated through. Serve with meatloaf. 8 points per serving
