Tips:

  • Choose fresh, ripe cranberries. Look for cranberries that are firm and plump, with a deep red color. Avoid cranberries that are soft, bruised, or have any signs of mold.
  • Use a sharp knife to cut the oranges and grapefruit. This will help to prevent the fruit from tearing and will make it easier to remove the segments.
  • Make the walnut vinaigrette ahead of time. This will allow the flavors to meld and develop. You can store the vinaigrette in the refrigerator for up to two weeks.
  • Toss the salad gently. Over-mixing will bruise the fruit and make the salad less appealing.
  • Serve the salad immediately. This will prevent the fruit from becoming soggy.

Conclusion:

This Cranberry Mandarin Salad with Walnut Vinaigrette is a delicious and refreshing salad that is perfect for any occasion. The combination of sweet, tart, and nutty flavors is sure to please everyone at your table. Whether you are looking for a light lunch, a healthy side dish, or a festive holiday salad, this recipe is sure to become a favorite.
