CHRISTMAS HAM W/ FRESH CRANBERRY-ORANGE GLAZE

Christmas ham w/ fresh cranberry-orange glaze image

I remember my dad used to make a ham w/ cranberries and juices and spices but couldn't remember the exact ingredients so I played around w/ them and , thankfully, lol, this Christmas every single person ate almost every thing from the pan. Leaving very little behind...so, so good!

Time 2h50m

Number Of Ingredients 9

10 lb spiral sliced ham, bone-in
3 c fresh cranberries or frozen and thawed
4 Tbsp honey, preferably clove honey
1/3 c orange juice, i used tropicana
2-1/2 Tbsp orange zest
1/4 tsp crushed cloves
1/2 c packed, light brown sugar
1 can(s) pineapple slices, (optional)
1-1/2 tsp ground cinnamon

Steps:

  • 1. Heat oven to 275.Place ham, flat side down in roasting pan. Cover lightly w/ foil and bake 1-1/2 hours.
  • 2. In medium sized pot, over medium heat, combine cranberries, honey, orange juice, orange zest, cloves and cinnamon. Cook on medium, stirring occasionally until cranberries start to sound like they're "popping."
  • 3. Cover pot, remove from heat and let cool. Remove ham from oven. Increase oven heat to 425. Make sure glaze is cool enough to handle w/ hands, ( this is the easiest way to do this, ) using your hands, spread the glaze all over the ham, including top and sides. If using the pineapple slices, place them on top of ham. Sprinkle the brown sugar all over ham. Place ham back in oven and cook, uncovered for another 15-20 minutes or until the brown sugar has melted and formed a nice crust. Take the ham out of oven and let sit for 10 minutes.

SPIRAL HAM WITH CRANBERRY GLAZE

Time 2h15m

Number Of Ingredients 5

1 large 7-10 lb. spiral sliced butt or shank ham cooked according to directions on package
3/4 c cranberry sauce
1/3 c packed light brown sugar
1 1/2 Tbsp lemon juice or to your taste
1/2-1 tsp ground cloves or according to your taste buds

Steps:

  • 1. Prepare ham according to directions on package. The ham that I had called for pre heating the oven to 325 degrees F.
  • 2. Wrapping ham tightly in aluminum foil. I used several layers. If using a plastic bag the time required is usually about 14 minutes per pound, or 17 minutes per pound if wrapped in foil. BUT FOLLOW DIRECTIONS ON HAM PACKAGE. My ham required a temperature of 325 for about 90 minutes for the size of ham I had.
  • 3. Then I removed foil and added glaze to ham and baked for an additional 25 minutes. Note you can double the glaze recipe if you would like to have extra on the side.
  • 4. TO MAKE THE GLAZE: In a medium sauce pan or bowl add the cranberry sauce, brown sugar cloves and lemon juice, stir till well mixed then brush over ham liberally, and return to oven and bake for an additional 25 minutes or so.
  • 5. Please note I lined the platter with green leafy Kale then separated ham slices, and arranged them on a platter. Then used a V tool to make the star burst orange and lemon halves and added a maraschino cherry half in the center.

Tips:

  • Use fresh cranberries. Fresh cranberries have a brighter, tarter flavor than frozen cranberries, and they will hold their shape better in the glaze.
  • Don't overcook the cranberries. Cranberries should be cooked until they are just softened, but not mushy. If you overcook them, they will lose their shape and flavor.
  • Use a good quality balsamic vinegar. A good quality balsamic vinegar will have a rich, complex flavor that will complement the cranberries and ham.
  • Taste the glaze before you use it. The glaze should be sweet and tart, with a slight tang from the vinegar. If it is too sweet, add more vinegar. If it is too tart, add more sugar.
  • Use the glaze sparingly. A little glaze goes a long way. Brush the glaze on the ham just before serving, or use it as a dipping sauce.

Conclusion:

Cranberry ham glaze is a delicious and easy way to add flavor and moisture to your holiday ham. It is made with fresh cranberries, balsamic vinegar, and sugar, and it can be used as a glaze or a dipping sauce. Follow these tips to make the best cranberry ham glaze possible.
