CRANBERRY AND ROASTED BEET SALAD
I created this as a healthy, tasty side dish to complement Christmas dinner. This enticing substitute for cranberry relish is excellent with turkey. Even the children loved it! Serve the beet blend alone or on a bed of salad greens. -Brianna St. Clair, Worland, Wyoming

GLAZED BEETS
My grandmother used this recipe to get us little vegetable haters to eat our beets! Her special dish made beets taste nearly as good as candy. With the tart-sweet scent of Glazed Beets in the air, it never took us long to jump down from the climbing tree out back when we were called to dinner.

EASY ORANGE CRANBERRY GLAZE
A good, easy, yummy glaze that can be used on chicken or turkey. I came up with this a few years ago for Thanksgiving, to change up the old boring turkey. Everyone loved it. There was no left-over turkey that year.

Tips:
- For the best flavor, use fresh cranberries. If you can't find fresh cranberries, you can use frozen cranberries, but thaw them completely before using.
- To make the glaze, you can use either white sugar or brown sugar. Brown sugar will give the glaze a slightly richer flavor.
- If you don't have a zester, you can use a microplane grater to zest the orange.
- To make the beets ahead of time, roast them according to the recipe and then let them cool completely. Store the beets in an airtight container in the refrigerator for up to 3 days.
- When you're ready to serve the beets, reheat them in a 350 degree Fahrenheit oven for about 15 minutes, or until they're warmed through.
Conclusion:
Cranberry glazed beets are a delicious and festive side dish that is perfect for any occasion. They're easy to make and can be made ahead of time. Plus, they're a healthy and nutritious way to enjoy your favorite holiday meal.
